There’s two days left to the big V-day ( or is that D-day … sorry, I couldn’t help it – and no I’m not a valentines day cynic … just realist … sort of … okay, truth is I love the mush – just not the hoopla of moo-lah people feel obliged to spend – - rant. over.)
Sorry about that tangent. There are 2 days left to valentines day and you want to do something sweet for your oh-so-adorable-honey-pie.
Flowers? … not unless you’re willing to sell a major organ.
Perfume? … maybe, but you did that for christmas.
Diamonds? … are you kidding, I thought the aim of the game was to save for a rainy day.
So, what do you do?
Do what I told you to do last year you crazy cats!! - – make the love of your life something.
They say, the way to a man’s heart is through his stomach – paaahhlease, I know a couple of ladies that wouldn’t mind a snack or two *cough – me – cough*
Not to mention the fact that you’ll look amazing for being creative, you’ll get extra kisses for taking the time to make her something annnd in the long run, she’ll thank you for saving money for those new shoes she’s about to buy … sorry, it’s true – - you may end up buying her some new shoes …sometime.

Hey fellas, if you think I should probably stop giving the ladies ideas of ways to buy new shoes … just skip that whole section.
And now …
Red Velvet Chewy Gingies
- 1 1/8 cups all-purpose flour
- 1 1/2 Tsp ground ginger
- 3/4 Tsp baking soda
- 1/4 teaspoon ground cinnamon
- 1/4 Tsp sea salt
- 1/4 Tsp cocoa powder
- 1/2 cup brown sugar
- 1/4 cup vegetable shortening
- 1/4 cup butter ~ room temperature
- 1 large egg
- 1/4 cup molasses
- 1Tsp finely grated ginger
- 1 Tsp vanilla extract
- 1 Tsp Red food colouring
- 1 cup Red sanding sugar and Pink Jimmies ( or any other colour your little heart desires)
Preheat oven to 350 oc.
In a large bowl, whisk flour, ground ginger, baking soda, cinnamon, salt, and cocoa powder.
In an other bowl, cream the brown sugar, shortening, and butter. Add egg, molasses, grated ginger, vanilla and food colouring; beat just to blend.
Next, add your dry ingredients.
In a small shallow bowl, mix together the sanding sugar and jimmies.
Using a Tbsp measuring spoon, create cookie balls. Roll each ball in your fancy valentines day mix.
Arrange on cookie sheet, leaving approximately an inch between each cookie ( they will spread) and bake for 10 minutes.
Allow to cool, and then wrap nicely to swoon the apple of your eye.
