In a large bowl, sift together Flour, Baking Powder, Baking Soda and Salt.
Using your mixer, fit with the paddle attachment – cream the butter and sugar until light and fluffy.
Add the eggs one at a time, mixing well after each. Add the coconut extract (how amazing does it smell huh?!?! – – I KNOW :)!!). Last, add the Sour Cream. Mix until well incorporated.
Next, add approximately 1/3 of the sifted dry ingredients, mixing well after each addition, until all of the dry ingredients are incorporated.
Once completed, fold out onto a large sheet of parchment paper and allow to chill for at least 1 hour, or at best overnight.
Unwrap your chilled dough, and now cut in half – placing the other half back into the refrigerator to keep cool.
Roll dough to 1/2 inch thickness. Cut out desired shapes:
Peace signs for Peace.
Hearts for Love
and J-O-Y to add a little joy.
Place your cookies on a your sheet, and bake for 12 minuets or until golden brown.
Once all baked, allow to cool completely. Brush each cookie with the icing and then – – make them sparkle 🙂
