Halloween Chocolate Funfetti Cookies

… I’ll stop, I’m already scared. I wish I could tell you that I love Halloween – I don’t. I don’t see why someone would want to purposely be scared or scare other people.

I’m a total chicken – I still call my mom, when walking to the train/bus station and it’s dark outside … I wish I was kidding.

This weekend I was watching the movie Hook (yes, the children’s movie) and Mr. LTSL told me to change the channel because it sounded scary … we’re pretty much besties!! I stinking love that kid.

So, I won’t be dressing up for Halloween – there are no trick-or-treaters in our neighborhood … instead I’ll be waiting for Saturday when all the candy goes on sale and then I can take it all and bake it in browines … or cookies … or c ake … or who am I to be biased?!?! – all 3!!

But just because I shitake mushrooms   at the slightest loud noise, and you won’t find me wearing a mask — it doesn’t mean I can’t sprinkle a little Halloween goodness all up in this joint!!

Plus, the Halloween oreos looks so cool!!

Halloween Chocolate Funfetti Cookies

 1 Cup butter at room temperature

1 ¼  cup packed light brown sugar

½  cup granulated sugar

2 large eggs

1 Tablespoon pure vanilla

3 cups all-purpose flour

½ cup cocoa powder

1 teaspoon sea salt

1 teaspoon baking soda

1 bag Halloween oreos ( I ended up using 12)

Halloween sprinkles

Directions:

Preheat oven to 350 degrees F.

In a large bowl , cream butter and sugars. Add in eggs and vanilla until well combined.

In a medium bowl mix the flour, cocoa powder, salt and baking soda. Add to the wet ingredients.

Using a cookie scoop, sandwich two scoops of cookie dough around an Oreo ( it’s like a chocolate oreo hug!!).

Roll in a bowl of Halloween sprinkles

Bake cookies for 12 minutes.

Ghosts, Goblins, Witches & Superheroes UNITE !! … or be like me and get into some comfy pjs and gouge on cookies and mini candy bars ( … kidding .. I won’t be doing this .. well, I won’t be doing it alone at least!!)

      1. I still didn’t decide, I am sure I am going to make cookies, and trying to narrow down my list. But I plan on taking our baby trick or treating, its going to be first one, so I want to concentrate more on that 🙂

      2. Sounds like fun!! And how exciting – first halloween!! Are you going to dress the baby up?
        I’m having a small costume party – nothing crazy, but it should be fun 🙂
