S’Moreo Banana Bread with S’Moreo Cookie Butter

Especially when said banana bread is slathered in cookie butter. Homemade cookie butter with coconut oil, and everyone is saying coconut oil is good for you and things – which means, this cookie butter is pretty much celery.

I’m about to have a crazy-fun-food filled weekend and I’m sooooooooooooo excited!! Toronto’s Front Street Foods; which I have to say has been such a huge success – I vote that it becomes an annual summer shindig the city holds – the Kensington Krawl; which I plan to blog about – but pretty much is a stroll through Toronto’s Kensington Market learning about the History and tastes offered annnnnnndddd Sweetery Toronto … which I think is the FIRST EVER all sugar coma induced foooood faaaiiiiiirrr!! You’ll be sure to find a zillion-trillion-billion pictures on instagram; im trying to go easy.


I can’t wait! Tell me, tell me , tell me what are you doing this weekend? Is it summery? Are popsicles involved? Ice cream? S’mores, sunshine and barefeet in the grass?!?! Dear Summer, please never end – except fall  I love your comforting spices, tastes and fashion. But I’m not ready to let go of you summer!!


While holding on to every inch of summer, have you guys tried the S’more flavoured oreos .. which I’ve coined S’Moreos( … go ahead Christie you can claim the name) – they’re goooooooooooood! I really like them, sweet but not crazy sweet.

So I threw it in banana bread and called it breakfast aaaaaaaaannnnnddd I made butta with it. Not just butter, like in proper English butter … this is seriously butta … it’s so good I was tempted to lick my blender risking getting cut.


S’moreo Banana Bread


  • 2 cups Flour
  • 1/2 cup Sugar
  • 1/2 cup brown sugar
  • 1 teaspoon Baking Soda
  • ½ teaspoon sea Salt
  • ½ cup Olive Oil
  • 2 Eggs
  • 3 very ripe Bananas, mashed
  • 1 teaspoon Vanilla
  • 5 Crushed S’more Oreo Cookies

  • Preheat oven to 350 degrees and spray a bread pan with non-stick cooking spray
  • In a large bowl, whisk together dry ingredients; flour, sugar, baking soda and salt
  • Add oil and eggs, one at a time.
  • Add mashed banana and vanilla, beat well
  • Fold in your cookies
  • Pour into pan and bake for 60 minutes


S’moreo Cookie Butter

  • 16 S’more oreo cookies
  • 1/8 cup coconut oil at room temperature

Combine both the oreos and the coconut oil in a food processor or blender. Pulse for 3 minuets – the butter will seem really thin ( that’s okay!!) as your butter cools, it will solidify.



Dark chocolate chunk kefir Oatmeal Banana bread.

If I ever become pregnant I seriously worry for my husband. I’m not even close to being pregnant and I get cravings like a mad woman!!

Randomly I’ll get a whiff of maple syrup and NEED TO HAVE waffles … sometimes is cheese danishes … other times its peanut butter cookies … other times doughnuts … sometimes it’s salad ( not very often, but it happens …) this time it was banana bread.


Banana bread studded with huge chocolate chunks – dark chocolate chunks. Not too sweet … so I can justify it as breakfast, but also sweet enough that I can have it as an afternoon snack over coffee.

That’s where this fine lookin loaf came from : Dark chocolate chunk kefir Oatmeal Banana bread.


I’ve never actually baked with kefir before, I didn’t know what to expect – I hoped that it would be acidic like buttermilk, but with a lower fat content. The result was perfect, a dense banana bread, that was loaded with chocolate chunks. Sweet – but not overly sweet … and ( note: I’m about to say the “M” word ) Moist … I can feel my teeth hurting from just reading that word.

Make the bread ladies and germs, you totes-ma-goats need this bread. Ahhh and then make this banana foster with it – you’re welcome!! And now … I need that banana foster.


Dark chocolate chunk kefir Oatmeal Banana bread.


3 whole, ripe bananas

1 large egg

3/4 cup Kefir Milk

1 tsp Vanilla extract

1 1/4 cup flour

3/4 cup old-fashioned rolled oats

1/2 cup brown sugar

1 tablespoon granulated sugar

1 teaspoon baking soda

1 teaspoon baking powder

1/2 teaspoon sea salt

1 tsp cinnamon powder

½ tsp ground ginger

1/2 cup dark chocolate chunks.

Preheat oven to 350 degrees.

Mash bananas in a medium bowl, then stir in egg and kefir and vanilla extract.

In a separate bowl whisk together flour oats, sugars, baking soda, baking powder, sea salt, cinnamon powder, ground ginger.

Add dry ingredients to the wet.

Stir in chocolate chunks.

Pour mixture into a lightly greased loaf pan.

Bake at 350 degrees for 50 minutes.

Sunday’s With Joy : Chocolate Chunk Bourbon Spiked Banana Bread Foster


I’ll give you a minute.

No, you’re not dreaming and I won’t judge you if you’re thinking about licking your computer screen.

I’ve never been so excited for banana’s to go brown.

2 x the amount of bananas – 2 x the amount of bourbon – a wholelotta Mmmmm.

oozing with brown sugar syrup, caramelized crispy bananas – the cool burst of french vanilla ice cream … and that’s just the topping.

That lovely cake you see  – – bananas, brown butter and chunks of chocolate to take your taste buds on a roller coast to yum-town.

Friday’s are meant to be celebrated so I saved the best Sunday’s With Joy Recipe, for last.

This is one killer of a desert ( let’s be honest, I want it for breakfast, lunch and dinner too)!! It’s rich, it’s decadent and it’s out of this world delicious.

Your weekend needs a little foster – you bring the spoons, I’ve got dessert covered and the best part is, we don’t even have to share!!


Chocolate Chunk Bourbon Spiked Banana Bread Foster

As if those baby’s aren’t gorgeous enough. Let’s foster a little foster ( bad joke, I know .. sorry):)

  • 1/4 cup butter
  • 1/2 cup brown sugar
  • 1 Tbsp Cinnamon
  • 1 Tsp Sea Salt
  • 1 Banana – sliced
  • 1 Tbsp Bourbon
  • Ice cream ( I used French Vanilla … feel free to use any flavour your heart desires – OMG, if any of use chunky monkey … please.send.pictures.)


  1. Melt butter over low heat, add brown sugar and cinnamon.
  2. Add sea salt.
  3. Throw in your sliced banana and allow to caramelize.
  4. Add a splash ( or two) of Bourbon and let the good times roll.

Cinni-tastic Banana Coffee Cake

Cake. It should be breakfast. And there should be cinnamon spice and all things nice.

And since it’s the first meal of the day – we should start with some fruit. Hence, the bananas.

Most importantly it should be delicious.

I could eat the picture :$

And it should smell like heaven as it bakes. It should smell so good, that as soon as it comes out of the oven you should be tempted to sneak a taste from the top. You know, that crunchy corner bit, a little burnt but mostly caramelized from the rich sugary deliciousness. You should be tantalized, but don’t do it.

It’s hot – trust me, it happened to a friend of a friend of mine (or maybe just me ….). I hear it can burn the roof of your mouth, all in the name of deliciousness.

Worth it? … Of course.

So I did this thing, I added cinnamon buns to banana bread and called it a coffee cake.

It was a good idea. My taste buds & tummy thank me … my thighs & behind, not so much. But I’m trying to convince myself that this is preparation for the cold weather (…. Whatever works).

Prepare yourself for a long winter, but getting toasty with a little coffee cake.

Cinni-tastic Banana Coffee Cake.

4 Bananas ~ smushed

¼ Cup Extra Virgin Olive Oil

¼ Cup Brown Sugar

1 Tbsp. Vanilla Extract

2 Cups Flour

1 tsp Baking Soda

1 Tbsp. Cinnamon

¼ Tbsp. Sea Salt

1 Tsp. Ground Nutmeg

3 Large Cinnamon Danishes ~ chopped ( snackage may occur during this process … just saying)


2 Tbsp. ready-made icing.


Preheat oven to 350 oc and prepare a 9 x 13 baking pan.

In a large bowl, add together smushed bananas, olive oil, brown sugar and vanilla.

Using another bowl, mix together flour, baking soda, cinnamon, nutmeg and sea salt.

Add your try ingredients to the wet and mix until just combined.


Add your chopped danishes.

Add to pan and bake for 35 minutes.

Remove from oven and drizzle icing over warm cake.

Get involved with a little yum … if not for the actual bread, just to make your kitchen smell like a million bucks ( how does a million bucks smell good … money smells disgusting) … instead you want your kitchen to smell lick-your-lips-delicious.

Pina Colada Banana Bread

It’s coming!!

Bring on the bright sunshine, beach trips, late night bar-be-ques and endless ice cream .

Commeeeonnn down … hot sticky sweaty feeling, frizzy hair, heat worthy standing in the freezer and getting so cranky that you want to just be left alone.

Summer. I’m. Ready.For.You.

Speaking of summer – – I’d like to do my civic duty of the day and make a public announcement.

*Ahem ahem*

Dear Ladies and Aliens,

If you’re going to wear flip-flops or sandals of any sort (yepp, even your cute sling backs) PLEASE FOR THE LOVE OF CUPCAKES AND ALL THAT IS SWEET

– – get your pedicure on!!

I’m not talking fancy pants pink sparkles (although, it would be cute 🙂 ) – – it doesn’t have to be over the top, just keep your little tootsies neat and tidy.

There’s little that’s more gross that yucky-smelly looking toes.

… and now, I’ll proceed to discuss an oh-so-yummy bread with you  ( … sorry for grossing you out before)

The good news is, you can bring summer to your tummy without having to deal with grimy toes, frizzy hair and sweating buckets ( I’m really not helping on the grossing out front) – – let’s get back to the goods.


Pina Colda Banana Bread

3 Medium Bananas ( preferably on the verge of going bad)

1/4 Cup Vegetable Oil

1/2 Cup Sugar

1 Tsp Coconut Extract

1 Tsp Rum

2 Cups Flour

1 Tsp Baking Soda

1 Tsp Cinnamon

1 Tsp Sea Salt

1 1/2 Cups Diced Pineapple

1/2 Cup + 3 Tbsp Grated Unsweetened  Coconut  ( separated)


Preheat oven to 350 oc. Prepare a 9 inch square cake pan ( you can also use a loaf pan, whatever tickles your fancy )

In a plate – smushify your bananas

Pour mashed bananas into a bowl. Add oil. Then the sugar. Now the Coconut Extract

and last – – a splash of rum 😀 Mix until well combined.

In a separate bowl – sift together all of the dry ingredients.

Flour – Baking Soda – Cinnamon and Sea Salt

Then, combine your wet ingredients with your dry. The dough will be very sticky – not to worry 🙂

Add the diced pineapple and 1/2 cup of shredded coconut. Miiiiiiixx.

Fill your prepared pan and sprinkle with remaining shredded coconut. Bake for 45 minutes, or until the bread passes the toothpick test.

So kiddos stay inside with the cool AC blasted, slather on some butter on this baby and bring summaaa to your tummy

(Ginger) Snappy Banana Bread

Happy November Sweet Hearts!!

… can you believe it’s already November? Where.is.the.year.running.away.to.? and WHY?!!?

Let’s move on, before I becomes sad … oh but wait, that means we’re SO MUCH closer to holiday cookies…and cakes… and deserts…*WOOT WOOT*. I’m okay now… how can I not be, when cookies are involved?!?! As the weather is cooling down… and I recover from OD-ing on Halloween candy (side note: mini chocolate bars = amazing … they also require you to eat a couple … so their not lonely in your tummy!!) ; I craved something scrumptious and … to be honest, something on the healthier side. So my sugar blasters ….

Let’s talk about bread … banana bread… Snappy banana bread!

You know, the kind that talks back …gives you a little attitude – rolls it’s eyes at you… well until you slater that little sucker with butter and bite into it – showing it who’s really the boss (maybe I got a little too carried away there :$ – … sorry)

I had these little puppies lying around my kitchen begging to be made into something other than a smoothy … and to the rescue (as always) came BREAD!! I knew I wanted a little something extra – a little crunch of fall. And so came the idea of adding broken ginger snap cookie *YES, YES I DID – and it was AMAZING*.  The Ginger snaps add that needed crunchy fall-ness, and a sweetness without being too sweet– it was perfect to be honest. Trust me when I say … those lonely banana’s were shown a good time!!

(Ginger) Snappy Banana Bread

1 Cup all-purpose flour

1/2 cup whole wheat flour (you could just use 1 1/2 cup all purpose flour)

1/2 cup sugar

1/2 cup brown cane sugar ( this gives the bread a little extra crunch, feel free to use any type of brown sugar)

1 tsp baking powder

1  tsp baking soda

1/2 tsp salt

1 tsp cinnamon

1 tsp ground ginger powder

1/3 cup vegetable oil

1/2 cup milk

1 egg lightly beaten

3-4 ripened bananas (smush-ified)

1 tbsp vanilla extract

8 Ginger Snap cookies, broken into small pieces ( I added some extras for the topping :))

1/2 cup flax seeds (Optional)

1/2 cup raisins (Optional)


Preheat oven to 400 oc . Grease 16×4 loaf pan.

In a large bowl sift together: flour(s), sugar(s), baking powder, baking soda, salt, cinnamon and ginger powder.

In a separate bowl : add oil,   milk, egg, vanilla and your lovely bananas that are about to have the time of their lives.

Marry the two bowls to begin the magic.

Add broken ginger snaps, flax seeds and raisins. Once it’s all stirred together and living in happy matrimony – add it all to the bread pan. Top with extra broken ginger snaps and send that puppy to the oven.

Bake for 40 minutes or 50 for an extra crispy bread ‘crust”.

Ta-da… sugar plums trust me when I say – this is magic waiting to happen .
