Sunday’s With Joy : Blueberry Peppercorn Goat Cheese Biscuits

Well lookie, lookie who finally decided to grace us with their presence!


I’m here … I’m baking and munching through the sweet life.

It’s been quiet on the blog, I know.

I have to share a little secret with you crazy kids. A little secret that’s pretty major.

For the last sixteen weeks I’ve been planning a wedding.

My wedding.*Cue the freak out music now*

Mr. LTSL asked me, I said yes and I instantly heard Etta James ” At Last” in my mind. Mr. Fiance ( side note: did you know fiance, is the male form of fiancee … we may have totally had a long discussion about such),makes my sweet life, that much sweeter and I couldn’t be happier / more excited / nervous / scared / anxious / giddy. This is huge to me. With that being said though, planning a wedding is hard and keeps both a little lady and her soon-to-be busy! And so, I’ve been MIA.

But I’m back. And I’m sprinkling your life with a little joy today. Actually, this week I’ll be doing a little Sunday’s With Joy catch up.

Blueberry Peppercorn Goat Cheese Biscuits.


Yes! Sweet – savory – spicy. You want and need this in your life. All of Joy’s recipes can be found in her outstanding cookbook, below I will simply include my adjustments ( because I can’t leave amazing alone, without added a little extra sweetness 😀 ) .

Blueberry Peppercorn Goat Cheese Biscuits.



  • Substituted Whole Wheat Flour for : 1 1/2 Cups Brown Rice Flour, 1/4 Cup Chai and Flax seed Powder, 1/4 Cup fiber curls.
  • Used Peppercorn Goat Cheese
  • Added 1/4 Tsp Cumin Seeds
  • Added 1 Cup Fresh Blueberries
  • Baked as one large biscuit, then cut into wedges.

Sunday’s With Joy : Blueberry Orange Almond Waffles

Would it be strange that I’m about to admit the best waffles I’ve ever made are actually pancakes – – confused? I don’t blame you.

It’s a double whammy SWJ week… I juuuust happened to miss the weekend when we were all supposed to make these little delights, and because I’m a blueberry feen and breakfast is my favourite meal of the day – –  I began having nightmares when I missed making Joy’s Blueberry Orange Pancakes.

I knew I needed a little blueberry-orange love in my life.

And it’s always a good time for breakfast. Always. Especially pancakes. Or in this case … waffles.

And sooooo … I sprinkled some joy into my life and took her ever so amazing pancake recipe – – and made waffles.


That’s how good they are. Totally cap-lock worthy, and you must say it all in one breath.

Let’s just get down to business….

Blueberry Orange Almond Waffles

  1. There are fireworks going off all around the kitchen at this point – the smell alone will knock your socks to the moon and back!!

Do I hear waffles for dinner tonight? – tomorrow’s breakfast, brunch, lunch, mid-day snack …. All of the above??!?! I like the way you think!!

Sunday’s With Joy : Brown Butter Blueberry Cake

It’s happening and I’m positive there’s not much anyone can do about it.

Every man – woman – child – young and old … they are all uniting in their love and efforts towards a single cause


This stuff is taking over the world and in the words of Miss Katy Perry … I liked it.

Seriously, if you haven’t ever had brown butter … wake up and smell the nutty liquid gold.

Remember last week’s Sunday with Joy how I raved about how amazing and cool Joy, of Joy the Baker is … well, now I’m convinced she’s an angel – – she compared brown butter to heaven – – and to put it politely this woman knows her glorious goodies 🙂

This week I have some more joy to sprinkle into your life.

Dear I say, this week’s recipe was better than last … hard to believe … I know

– – but this one deserves a HOLY MOTHER OF YUM accolade!!

Brown Butter Blueberry Muffins …. made into a cake 😀

It’s pretty much crack in muffin form … and  because I know I have no sort of self-restraint, and while making the recipe, wanted to drink the brown butter all on its own … I made this recipe into cake instead. And then  I quickly gave it away.

… well sort of. I took it to a dinner party … and had a slice ( maybe two).

You’ll notice that I haven’t posted the recipe to this little beauty – – that because I NEED you to buy Joy’s book. Even if you just get it for this recipe alone





Buuuuyyyy iiiittt … hey, good idea – – buy it for your mom for mommy’s day, use it and then share the goodies. Can you say, DOUBLE WHAMMY!! 

Getting back to the buttery-business.. I made a couple of changes to joys recipe…

She made muffins – – I made her recipe into a cake

She used Granulated Sugar – – I ran out, so I used brown sugar

She used Vanilla – – I ran out ( I know you’re thinking, what kind of baker am I – – and I honestly have no idea 😦 ) I used almond extract.

Other than those teenie-tiny details, this loveliness is pure J.O.Y 🙂

actually – – I take that back, I have FANTASTIC NEWS!!

Are you ready for it?!?!






I’m back to being EMPLOYED!! 😀 yahooooooo!! * cue the fireworks*

I know it sounds like im exaggerating, but this honestly means the world to me!! A little over two months ago, I lost my job due to cut backs – blah blah blah– and I was really upset. Really really really upset!!

Luckily, I had all of you though – – I didn’t share this news on LTSL-blog because, I didn’t want to come down from my sugar high. This blog was my escape. It was where I could turn, and let my imagination run free without having to worry about anything else. And I thank YOU all for allowing me to do so 🙂 .

Being employed in a corporate environment, where I’m putting my university education to practical use, means more to me than just being employed or just earning an income. To me, it’s my independence. It’s the product of all of my hard work from university, and extension of me now doing my post-grad (p.s for those of you who don’t know … I’m also doing my masters :)).

So, loosing my job sucked more than running out of chocolate chips on a rainy day.

But noooowwww… I’M BACK!!

I’m back and loving it 😀 My first day was yesterday. Luckily, I work with a great set of people and in the words of Annie (yes, orphan Annie) — “I think I’m going to like it here” 😀 lol.

Want to know something else that’s pretty hilarious ( but oh so typical of what a roller-coaster my life is). I went to work yesterday – – had a marvelous day … and then came home to find ANOTHER JOB OFFER!!

… yes cupcakes, for two stinkin’ months I was home tossing my cookies to find something and now – – TWO JOB OFFERS … tell me, what in the mother of cupcakes is up with that?!?!  – of course I politely declined.  I’m not going to turn down my current role after one day! My mom taught me a little bit more manners than that and also, the industry I work in is far too small for me to ruin any sort of relations.

So – I was honest and told them that I would have to decline.

Such is life kiddo’s …

I also have some other good stuff to share with you ….

Blueberry Skotidakis Greek Yogurt!!

I saw this yummy-ness in my grocery store and had to pick it up!!

Let’s chat a little about Greek Yogurt… I LOVE the stuff!! Seriously, hook me up to a Greek Yogurt IV and I’d by a happy little cupcake for a long time!! And in this case, I had a portion controlled amount of Greek Yogurt along with fruit preserves.


There are four different flavours to choose from – strawberry, honey, raspberry and blueberry. Blueberry of course won the battle because, I would make love to blueberries if possible (errr… i’ll try to cut down on the creepyness :()

So, maybe I went into this whole taste test a little biased. I loved all components and knew it would be magic once it was all mixed together.

And, magic it was!!

Besides the actual yogurt being extremely thick and decadent – – the blueberry preserves were just sweet enough.

Dear I say, I’d actually consider substituting this in for desert once in a while. It was THAT good!! The yogurt is smooth and creamy – – it’s thicker than regular yogurt and quite filling. I had this little baby for breakfast and it kept me going well into the afternoon.

In total there’s about 2/3 cups of yogurt and 1/3 cup of flavouring. For the complete package it’s 190 calories, 110 of it being from fat. Though you may find the fat content a bit high, this is pretty normal for greek yogurt. I have tried other brands that make fat-free and 1%  – – but in comparison, they just weren’t as creamy as this one.

The extra fat is TOTALLY worth it when it comes to the taste 😉 .

What’s extra special about this product, and what actually drew me to purchasing it (besides the deliciousness that is Greek yogurt and blueberries) is the fact that, there is a slight groove separating the two flavours. Once you’re ready to chow down – – you fold along the groove, add the two together and then whisk yourself away to a Greek fantasy.  It’s perfect for those busy mornings when you want something quick and healthy – but just don’t have the time to throw something together.

I honestly loved this. The only real drawback I saw was the amount … I wished there was more 😦 (I know you’re laughing … lol) It was probably the ideal amount, and I wasn’t hungry after eating it – – I just found that my Greek fantasy ended far too soon!! … or maybe I ate it too quickly 😉 he he he 

Would I be buying this again – for sure!

Triple Berry Fennel Salad with Maple Mustard Dressing

Want to know something weird – I adore fruits in my salad…. but I don’t like fruit salad.

I’ll eat all the fruits in a fruit salad separately – – but add them all in a bowl and I’ll pass – weird right? I think I just don’t like them touching … I know, that sounds creepy – – sorry 😦

Want to know something else, I adore salads. They’re just so fresh and versatile. Whatever you have on hand, throw it on top some greens – add some grains, nuts or seeds and *bham* you have yourself a salad.

Winter, spring, summer or fall – – I would be content to eat salads morning, noon and night (but then after, please pass me the most luxurious, butter filled cookie you have ;))

It’s about balance. If I eat a salad or two, I can eat desert ( a hundred times – – what, *who said that* lol)

So, ladies and gents – – I present to you one of my favourite salads.

Triple Berry Fennel Salad with Maple Mustard Dressing

Triple Berry Fennel Salad

3 Cups Baby Spinach Mixed Greens

1 Medium sized head of fennel, finely sliced

1 Cup sliced Strawberries ( approximately 5 large strawberries)

1 Cup Blackberries

1 Cup Blueberries


Easy-peasy : take all of the above and mix together.

Maple Mustard Salad Dressing

1/2 Cup Extra Virgin Olive Oil

3 Tbsp Apple Cider Vinegar

1 Cup Maple Syrup

1/4 Cup Dijon Mustard

1 Tbsp Black Pepper

1/2 Tbsp  Ground Garlic Powder


Whisk together the extra virgin olive oil, apple cider vinegar and maple syrup.

Add the Dijon Mustard, Black pepper and ground garlic powder.

Refrigerate until ready to use, or add this liquid love to your salad and enjoy!!
