Fudgy Chocolate Chip Brownies

Very important question – your brownies; do you like them more cake-like or fudge like?

Frosted?

Jam packed with other goodies?

Nuts? … who am I kidding hold the nuts.

I seem to have a habit of fussing up my brownies on the blog – but sometimes a girl just has a hankering for some daaaaarrrnn tootin good fudgy brownies!!

So I made some.

And true to my nature, I couldn’t just make regular brownies, I needed them obviously to have a bit of a spin.

Coconut oil.

Ahhhhh these are probably the closest brownies to fudge, without actually eating fudge.

Fudgy Chocolate Chip Brownies

INGREDIENTS

¾ cup coconut oil

1 cup chocolate chips – divided ½ cup x ½ cup

1 cup packed brown sugar

3 eggs

1 teaspoon sea salt

½  cup all purpose flour

¼ cup cake flour

INSTRUCTIONS

Preheat the oven to 350 degrees.

In a microwave safe bowl, combine ½ cup chocolate chips and coconut oil for 25 seconds, or until the chocolate melts.

Whisk the chocolate mixture in a bowl with the brown sugar. Whisk in the eggs until the mixture thickens, about 30 seconds. Stir in flours and sea salt until just combined. Toss in remaining ½ cup chocolate chips.

Pour into a prepared baking dish and bake for 25 minutes.

Allow to cool and slice.

Children of the playground … wooohoooo it’s weekend!!

I remember when we were younger, after the first day of school both my brother and I would always come home to both my parents home and a special treat. It was tradition. My parents always took the first day of school off … even when I went off to university ( I wish I was lying) … the special treats stopped though. You win some you loose some.

There’s always something exciting about the first day of school …

Fresh new paper, pencils that are sharpened, the fresh smell of the school. Granted, by the end of the week there are doodles all over your papers and you can’t even find that pencil you had Monday.

The beginning of September, with school starting, nights getting cooler and mornings getting darker always remind me of one thing … fall. It also doesn’t help that you can already get a PSL from your friendly barista … anywhooo …

Fall means a couple things to me

  • Chunky knits
  • Cinnamon
  • Pumpkin
  • Apples
  • Comfort food / goodies

And sooo I had no choice but to get my bakin’ on … hehe … bakin sounds like bacon. Maturity.

Caramel apple candy stuffed apple cookies

Ingredients:

1 cup margarine or butter

1 cup icing sugar + (2 Tbsp Icing Sugar for dusting … optional)

1/2 tsp. sea salt

1/4 cup applesauce

1/2 tbsp. cinnamon

1 tsp caramel extract

1 tsp vanilla extract

1 tbsp apple juice

2 1/2 cups all-purpose flour

24 werther’s caramel apple candies

Directions:

Preheat oven to 325 degrees.

Mix together the butter, 1 cup sugar, salt, applesauce, cinnamon, caramel extract, apple juice  and vanilla until well-combined.

Then gradually add in the flour.

Mix until fully incorporated and smooth.

Form dough into 24 balls.

Gently flatten each ball and  add worther’s candy in the middle.

Cover with dough.

Bake for 12 minutes or until lightly browned.

Once cools, dust with remaining 2 tbsp icing sugar.

Snack Cupboard Cookies

I don’t even want to write much in today’s post…. Seriously the more I talk and ramble on (even though I adore your beautiful faces) the longer it’s going to take you to make these cookies.

I know I often say, you need these cookies/cake/bread ( I heart carbs clearly) when I post a recipe– and I’m normally right … but this time, YOU ACTUALLY NEED THESE COOKIES, it’s like a do-or-die situation .. except not, and I could just be acting over dramatic or dealing with the effects of a major sugar high.

Now I must warn you – nothing about these cookies are healthy – except everything about them is delicious! Sweet – Salty – Chewy – Crunchy – YUM!

These are not the type of cookies, you eat if you want to be dainty over tea. No, no – these beauties are chock full of M&Ms, pretzels, Mini Rolos, Oreos & lays chips; they’re the type you face-plant into and eat cookie monster style not leaving a crumb of evidence of their existence.

Calling all major junkies … err … junk food lovahs – clear out your snack cupboard, it’s time to make coooooooooooooooooookies.

I blame the sugar … and m&ms … and rolo – they’re so little and cute.

Snack cupboard cookies 

Ingredients:

  • 1  cup of all purpose flour
  • 1/2 tsp. of sea salt
  • 1/4 tsp. of baking soda
  • 1/2 cup of butter at room temperature
  • 1/2 cup of tightly packed light brown sugar
  • 1/3 cup of granulated sugar
  • 1 egg (beaten)
  • 1 tsp vanilla extract
  • 2/3 cup almond M&M Candies
  • 1/2 cup crushed Potato Chips
  • 1/4 cup broken up pretzel pieces
  • 1/4 cup mini oreos
  • 1 cup mini rolo chocolates
  • 24 pretzels for topping

 Directions:

  1. In a medium bowl, sift together the flour, baking soda, and salt. Set aside.
  2. In a larger bowl, beat the butter and sugars together.
  3. slowly add the egg and vanilla extract. Beat to combine, scrape down the sides of the bowl.
  4. Add the flour mixture and beat just until there are no more streaks of flour. Stir in the M&Ms, chips, pretzels, oreos and mini rolos.
  5. Preheat the oven to 350F. Line baking sheets with parchment paper. Scoop out dough into 24 mounds . Top each cookie with 1 pretzel.  Leave about 2 inches between each ball. Bake for 10 minutes. Allow the cookies to cool on the baking sheet for a few minutes before removing.

Irish Car Bomb Popcorn

Popcorn … Popacorno popacorno, that’s popcorn in Italian (name that amazing t.v show) … hehe ohhh Schmidt, you lovely lovely schmidty-roo!!

You guys need this popcorn, it’s part of a healthy diet and shnidzz … it’s not, but popcorn is a whole grain, so do the dirty work and justify the healthification.

Also, HAPPY ALMOST ST. PATTY’S DAY … are you doing anything special to celebrate? Making stew, eating green stuff, drinking green stuff, running away from any bar because it’s going to be crazier than the new box of marshmallow-only lucky charm cereal?!?

By eating this popcorn, you’re really just doing your part to help society get their irish on … also, it’s the weekend. And booze.

 Irish Car Bomb Popcorn

1 bag microwave popcorn – popped

3 cups of granulated white sugar

1/4 cup Guinness beer

¼ cup Baily’s Liquor

¼ cup Whisky
3 Tbsp unsalted butter
1 Tsp rum extract
1 ½  tsp salt
1 ½  tsp baking soda

  1. Place popped popcorn in a large bowl or foil roasting pan (this works great if you have one available).
  2. Line 1 large baking tray with foil
  3. In a large saucepan, combine sugar, Guinness, Bailey’s, Whisky, butter, Rum Extract, and salt. Heat over medium heat, stirring continuously until sugar melts and caramel becomes a light brown.
  4. Add the baking soda and continue to stir keep stirring. NOTE: The mixture doubles up very quickly!!
  5. Remove from heat, pour over the popcorn.
  6. Spread the popcorn mixture out on foil lined sheet pans and allow to cool at least ten minutes before eating.

Double Cookies and Cream Nutella Cookies

I feel like I owe you big time!! For my lack of posting … especially my lack of posting of my own recipe! The good news is, I do have a good reason for my MIA-ness …. I spent the better part of August fasting for Ramadan and then a couple of days after celebrating Eid, I flew off to Trinidad for a little vacation.

Ramadan – – amazing

Eid – – food coma but amazing

Trip to Trinidad – – the best I ever had ❤

Instead of saying sorry for running away …. I’ll hypnotize you with deliciousness 🙂 I do it out of love.. I love you – – and I love cookies.

Last Saturday, a group of Smart Cookies and I took part in Living The Sweet Life’s first Cookie Crawl, so naturally as if I didn’t eat enough cookies last weekend, I thought this weekend I would share the cookie love with you.

Calling all cookies and cream lovers!! This one is for you …. add some nutella to the mix and you have a fudgy decadent cookie that’s just calling for a tall glass of milk. This is the perfect I’m sorry cookie … it’s also the perfect “hi friends, I went on vacation and spent most of my time at the beach so I didn’t get you anything” kind of cookie …. just saying  – – in case anyone is in such a situation.

Awkward.

*cue the cookies*

Double Cookies and Cream Nutella Cookies

1 1/2 cups Flour

1/2 Tsp Baking Powder

1/2 Tsp Baking Soda

1/2 Tsp Sea Salt

1 Tbsp Cocoa Powder

1/2 Cup Butter – -at room temperature

1/2 Cup Nutella

1/4 Cup Granulated Sugar

1/4 Cup Brown Sugar

1 Egg

1 Tbsp Vanilla extract

1 Cup Hershey’s Cookies and Cream Kisses – – coarsely chopped

Directions:

Preheat oven to 350 oc and prepare cookie sheet for baking.

Whisk together flour, baking powder, baking soda, sea salt and cocoa powder.

In a large bowl; mix butter, Nutella,  granulated sugar and brown sugar.

Next, add the egg and the vanilla extract.

Add the dry mixture to the wet and mix well.

Last, add the dose of double cookies and cream – – kisses and Oreos.

Form using an ice cream scoop and bake for 10 minutes ( or 12 for a crispier cookie).

Though this cookie is screaming a glass of milk to me – – I know people pair their cookies with tons of other things. Some prefer a cup of coffee … other’s don’t dunk, they just want to enjoy the cookie… maybe you top you cookie with a little peanut butter ? Canadianfied Red Velvet fudge

I was SO good for once.BEFORE an actual holiday I made a sweet treat;

I had the recipe written – photographs taken

– this little delight was even consumed BEFORE canada’s day!!

I was all wooo-hooo (p.s I’ve realized I’m a woo-girl … I’ve decided to embrace it) I’m on a roll.

Canada’s Day came and I was all – – ooooo fireworks

And then I needed a day to recup.

Before I knew it – It was the 4th of July and I was all – – ooohhh sparkly , fireworks and BBQ ( even though we live in Canada, any excuse for bar-be-que works for me 🙂 )

Let’s celebrate life instead … in a red and white fashion

(… yeasss – – that would work)

Or we could just ixnay on  celebrating anything and just eat these little morsels of love because they will give you a sugar high faster than any willy wonka factory.

On that note – – these babies are saaaawwwweeeetttt.

Like VERY sweet.

But they are yummy – -and easy and sparkly 😀 

Canadianfied Red Velvet fudge

1 Cup White Chocolate Chips – Divided 1/2 cup by 1/2 cup

1/4 Cup Red Chocolate Candy Melts

1/4 Tsp Baking Soda

1/4 Tsp Sea Salt

1 Cup Condensed Milk

1 Tbsp Clear Vanilla Extract

1 Tbsp Red Food Colouring

1 Tsp Cocoa Powder Red ( or any colour your little heart desires) sprinkles/sparkles/pretty shiny bits

Directions: 

Lightly spray a large sheet of foil with cooking spray.

Line an 8 inch square pan with your greased foil, keeping the greased side up.

In a large microwave safe bowl, mix together the 1/2 cup white chocolate chips – red chocolate candy melts – baking soda and sea salt.

Add the condensed milk.

Microwave in 45 second intervals, until your mixture is smooth and velvety (this should take approximately 3 minutes).

Add vanilla, food colouring and cocoa. Working quickly, pour into your prepared pan.

Allow to chill for at least 1 hour ( or over night … if you can wait 😀)

Time to get funnnkayy!

In a small microwave safe bowl, melt the other 1/2 cup of white chocolate chips.

Smooth over your chilled fudge.

Make it sparkle!!

 

*also totally acceptable for Christmas, valentines day or any other day you feel like embracing a little red and white action *

Sooooo this month, I got another package – kind of like last months, except this one had different items but was still overflowing with delicious treats!! My May Foodie PenPal Package arrived just around my birthday – – and it was exactly the pick-me-up I needed. Without dwelling on it too much, things just weren’t so sweet so this package VERY welcomed.

There’s something magical about receiving a special treat from half way across the country from a complete stranger. This month the wonderful Jennifer, was matched with me – – it turns out this was Jennifer’s first month participating — and to be honest, I wish everyone would be matched with someone like her. Through our e-mails back and forth she seemed so nice!! … she quickly e-mailed me to find out a little about me and then it seems like she got right to work.

I was knocked off my toes to see how well she did!! Not that I thought there would be any problems, but judging from the items I got – – you’d think this lovely lady had known me for years 🙂

So, you want to know what I got?

  • A box of Spiced Apple Chai Tea  – – perfect timing, my tea from last month JUUUSST ran out!!
  • A bag of Cranberry Maple Granola – – really, do I have to go into my granola addiction. The monster has been fed, and LOOOVED it.

  • A sample of Fair Trade Green Tea – – :). Happiness. True. Happiness.
  • An Wheat-free Oatmeal Bar – – perfect for those early mornings, I’m running out of the house.
  • Thai Spicy Rice Snack Mix – – I haven’t tried it yet, but it looks goooooooooooooood!
  • Hot Wasabi Hot Peas – – *drool* ~ brother LTSL got in on this action and … let’s just say we have an empty tin in the recycling now 🙂
  • Organic.FUDGE.BROWNIE.COOKIES. *faint* holy mother of cupcakes, I had one as soon as I opened the package and I swear I didn’t a moment to remember I wasn’t dreaming!!
  • Pretzel & Peanut Butter Cadbury’s Milk Chocolate – – HOW WELL DOES SHE KNOW ME!!
  • Chocolate Pocky sticks – – I loved these, I hadn’t had them since I was little.
  • Lifesavers — how ironic, just as my life needed to be saved these ended up in the mail 🙂
  • 2 Samples and the recipe for Jennifer’s AMAZING power cookies. Not only did I eat both – – I’ve also made the recipe, and shared the cookies to pretty much everyone I know. Its addicting and makes me smile from the inside out!!

Jennifer, thank you SO much. Everything in the box was amazing … you’re amazing. I truly wish your package that you received was just as awesome. And hopefully, you’ll continue being part of the Foodie PenPal Program?
