Oh My Yum Peanut Butter and Jelly Sandwich Cookies

CONFESSION: I’ve celebrated National Peanut butter month, but … I’ve left the BEST for last!

Today marks the last day of National Peanut Butter Month 😦 and while I’m a little heart-broken – – it’s been such a fantastic month!!

To be honest, I think I’ve done the month justice.

I’ve ploughed through 4 Liters of Peanut Butter  countless sticks of butter – seas of sugar – – and the flour situation …

don’t get me started ( at one point, I had to do an emergency flour run 😦 lol).

It was a month filled with browniescakefrench toastoatmealpopcornbread and while I wasn’t eating peanut butter… I was drinking it.

And though – – some may say, I’ve eaten more peanut butter than the average cupcake – – my list is not complete without these cookies!! 

Dear I claim these cookies to be THE BEST PEANUT BUTTER COOKIE I’ve had In.my.life.

Pretty strong claim huh?  – Especially coming from a cookie monster like myself … I’ve had a decent amount of cookies – – and still no other Peanut Butter Cookie stands to match the chewy, nutty and ohhh myy yummm deliciousness of this bad boy.

So what makes it so spanky? …. This little puppy is a PBJ Cracker Sammie  hugged by a PB Cookie – – can we say  Hippy style love fest!!

Sugar Pies… even if you haven’t celebrated the month (…yet)- there’s still time… do yourself a favour and get this little mounds of joy

Happy Peanut Butter Munching my loves.

 Oh My Yum Peanut Butter and Jelly Sandwich Cookies

Yeild : 1 Dozen

1/2 Cup Butter – at room temperature

1 Cup Brown Sugar

3/4 Cup Peanut Butter

1 Egg

1/2 Tsp Vanilla

1 1/4 Cup Flour

1/2 Tsp Baking Powder

1/2 Tsp  Baking Soda

1/4 Tsp Sea Salt


24 Rtiz Cookies

12 Tsp Peanut Butter

12 Tsp Jelly


Preheat oven to 350 0c – line a cookie sheet with non-stick paper, or lightly spray.

In a large bowl,  cream together butter and brown sugar.

Next, add 3/4 Cups Peanut butter.  Mix well. Then, add egg and vanilla.

Now, sift together flour, baking powder, baking soda and sea salt.

Gradually, add flour mixture to your peanut butter mixture.

Form cookie dough into 24  balls, using a 1/8 cup measuring cup.

Arrange your 24 Ritz crackers on a clean surface.

Slater 1 tsp of peanut butter on 12 crackers.

And spread the same love using jelly on the other 12 crackers.

 Sandwich them! 

Flatten two of your Peanut Butter Cookie Dough balls .

Place your Ritz Sandwich between the two flatten pieces.

Let. Them.Hug. it out 😉

seal all of the sides, locking in all of the peanut butter delicious-osity.

place on cookie sheet – and repeat.

Bake for 10 minutes.

Allow to cool and enjoy with a cold glass of milk.

Double Jelly Peanut Butter Linzer Tart

Peanut Butter and Jelly – – the perfect combination of sweetness meshed with  salty and creamy, creating a tantalizing spell of amazingness.

But here’s the question – what kind of jelly do you us?

Are you more of a Jam fan?

– Strawberry

– Grape

– Cherry


– Blueberry

– Apple Butter

….. ohhh the insanity of choosing!

This recipe is especially for those of you who won’t choose favourites or for people like me, who would rather get in as much jam as possible ;).

… I do these things because I love you. That, and I love peanut butter and I’m still celebrating national peanut butter month.

The inspiration of this tart came directly after reading about this little beauty by Heather of Sprinkle bakes. This woman is a baking goddess – – seriously, I’m convinced she can make  air taste like delicious candy. I can’t wait for the release of her book … I may (totally) have pre-ordered a copy (….or two *cough -five- cough*) … not the point though.

So I thought – – I need to peanutbutter-er-ize this little number.

And so I did.

Before I share the love and provide you all with this recipe – – I HAVE to tell you a quick little story. I made this tart early one morning. It came out just as I had hoped and had my entire house perfumed with the sweet smell of peanut butter cookies. I was so excited to let it cool – – and then slice it and have myself a lovely mid-day snack.

I made it.

Went out, and left it to cool

… and came home to a pan full of crumbs 😦 .

*crash – bham – boom* <— that was my heart breaking 😦

Let’s just keep things civil and say – – papa LTSL, couldn’t wait. He went to town and decided that it was in fact so delicious that the neighbours needed a slice… and that was the story of my little tart.

That means … lots of PBJ love swept the land, but none for my grumbling little tummy.

Since I know you’re all super-smart cookies … I know you will suggest that I just make the tart again – – and what can I say, if you request me to do so … I may just have to…. no need to twist my arm 😉

Double Jelly Peanut Butter Linzer Tart

1/2 Cup Butter

1 Cup Brown Sugar

3/4 Cup Peanut Butter

1 Large Egg

1/2 Tsp Vanilla

1 Cup Flour

1/4 Cup Quick Oats

1/2 Tsp Baking Powder

1/2 Tsp Baking Soda

1/2 Tsp Cinnamon

1/4 Tsp Sea Salt

2 Cups Grape Jelly

2 Cups Strawberry Jam


Preheat oven to 350 oc. Lightly spray a jelly roll pan (17 x 12 “).

In a large bowl cream butter and brown sugar.

Once combined, mix in your egg.

Next goes the vanilla. And of course, don’t forget the peanut butter.

In a separate bowl, mix together the Flour, Baking Powder, Baking Soda, Sea Salt, Cinnamon and Quick Oats.

Add your dry ingredients to the wet… miiiiiiiiixxxxx.

Divide your dough in half. Wrap half in parchment paper and chill for at least 15 minuets ( *note: the longer the dough chills, the easier it is to work with … I was impatient :()

Working with the other half of your dough, spread creating a thin layer across your prepared pan.

Now, it’s Jelly Time :D!!

Using a spoon, and working with your pan with the longest side towards you – begin to stripe your jam.

Begin by first creating a strawberry jam stripe – followed by a grape – followed by a strawberry stripe.

Continue until you cover your tart base…. (if you’re getting excited, that makes the two of us 😉)


Next, working with your chilled dough, between two pieces of parchment paper roll into a 1/4 inch thick sheet. Cut into 1 inch strips.

This can be done meticulously by using a ruler  ( which would create a neater looking pie), or you can take the “rustic” aka lazy/hungry route like me and just average.

Next, weave your PB strips across your tart base. Again, this can be done as carefully as you’d like, or as “rustic” looking as you’d like. I do have to say though, this tart is extremely forgiving. Once baked, any cracks or bumps will disappear *phew – – close one ;)*

Bake 30 minutes – – Allow to cool for 15.

Then, if your Papa doesn’t attack it – – dig in 😉

Peanut Butter and Jelly Stuffed French Toast

I can’t explain to all of you, just how much I love the weekend.

Sleeping in … eating when ever and whatever … being on no sort of schedule … basking in the sun … waking up to make a gorgeous breakfast ….did I mention sleeping in 😉

I admit, I LOVE to sleep.  Being all comfortable in my pj’s …. wrapped in my blanket … and my bed – – ohhhmmmmyyyggaawwddd!!

Seriously – – it’s a love affair.

When I do finally rise from my slumber, and I’m ready to take over the world

I want something quick

I want something easy

But …

I also want delicious

and comforting

and rich

and toasty

and sweet (a sweet breakfast, always makes the day spanky-pants ;))

if it involves peanut butter – – I think about marrying it.

… you’d think for a second there I was describing my perfect man lol.

As we’re on the top, any man that is willing to wake up early (or earlier than me), make these and then bring it back to bed – – mmm… yea, let’s just say here comes the bride 😉

Can we chat about french toast for a second though? – french toast, do you use regular sandwich bread – – or something denser? Rye? Challah? pumpernickel (different… but SO delicious) … or do you use something a little richer – cinnamon raisin bread – banana bread??

Do you prefer the cinnamon and sugar in the egg batter – – or outside creating a gorgeous sugar crust?

*sigh* the heart aches of a foodie.

It’s easier just to kick back and indulge in this yum-osity ( but seriously, I’d love to know – – leave me a comment and let me know)

Peanut Butter and Jelly Stuffed French Toast

Yield: 4 Sandwiches

8 Slices of Rye Bread

6 Eggs

1/3 Cups Full Cream

1 Tsp Vanilla Extract

1/3 Cups Sugar

4 Tbsp Cinnamon

3 Tbsp of butter (used to make you toast, extra toasty;))

4 Tbsp of you favourite Jelly

4 Tbsp Peanut Butter


Over medium heat, add butter to a frying pan – – allow for butter to melt.

In a large bowl, add eggs – cream – vanilla – sugar and cinnamon.


Arrange your rye bread in a pretty arrangement on a plate (feel free to use your favourite kind of bread – rye is dense and oozes with yumminess)

Slather, 4 slices of Rye with Jelly and then the other 4 slices with peanut butter.

Sandwich 1 slice of peanut butter bread, with 1 slice of jelly bread (note, you are now witnessing love making 😉 lol)

Working with 1 sandwich at a time, dip into egg cinni-sugar mixture. Coat both sides.

Add to your heated pan. Cook on each side 2 minutes, until browned and toasty!

Remove from heat – – and repeat with other sandwiches.

I believe – – breakfast is served 🙂

Trinidadian Peanut Punch

The Birds are singing their little hearts out

The Sun has come out to play

Everyone is letting their pale skin see the light of day

…. I even saw a butterfly yesterday


Of course, I can’t hate on mother nature this year – that little lady was extremely nice to us … we didn’t get much snow, I can’t even claim that it was really that cold – – I think her and I have finally come to a common ground.

As I have her attention though, I must do us all a favor – –

Dearest Mother Nature – – thank you for not freezing my cookies to bits this winter – – but please come june, can you not turn my hair into a total frizz ball – – I love you, but seriously … when my hair looks like that, no one loves me and you know how cranky I get when I’m hot and sweaty (ewww :()

Thanks lady … I’ll repay you by recycling and not littering.

To celebrate this phenomenal amazing-tastic weather and the fact that I saw a butterfly ( and I seriously think butterflies are magic) I have the perfect drink to quench your thirst.

My main hype-man actually requested I make this drink for him – – who can say no to that man?

So I made it.

He drank it.

Peanut Buttery Fantasy… 

It’s calling your name … answer, you won’t regret it 😉

Trinidadian Peanut Punch

serves 1 

1 Cup Unsalted Peanuts

1/2 Cup Smooth Peanut Butter

2 3/4 Cups Water

1/2 Condensed Milk

1 Tsp Vanilla Extract

1 Tsp Cinnamon

1 Tsp Nutmeg


Add all of the above ingredients into a blender.

Blend until smooth.

Enjoy right away, or refridgerate until ice cold.

Luck of the Irish Peanut Butter Chocolate Frozen Mocha


Wooo-hooooooo …. bring on the green cupcakes … got green cookies? – yes please …. mint ice cream … suuuurrreee …. hey, are you making  green eggs? – – make me a plate… and of course, what would St. Patty’s day be without GREEEEENNN BEEEERRRRR?!?!

🙂 See why I like celebrating such highly important holidays … lol.

So really, what is St. Patty’s day – – and why do we celebrate?  the green beer of course!  it’s actually a celebration of Saint Patrick an Irish icon. It was once upon a time a highly religious celebration – – but now, everyone just wants to get their irish on and shake their shamrocks 😉 … so let’s do it good looking people.

Sure it’s early – – but let’s get the happy juice flowing and I have just the thing to get you to do an irish jig… and, it’s not green just in case, you’re weirded out by drinking something that resembles slime!!

It may not be happy hour here, but everyone know’s  today is the one day that the entire world runs in accordance to the time in Ireland – – and I believe it’s happy hour there (… maybe not, but still – – it’s Saturday) – – get your drank on, party people – – but be responsible 😦 – – seriously, be a cool temporary Irish and drink like a responsible little leprechaun, and keep your lucky charms together.

Luck of the Irish Peanut Butter Chocolate Frozen Mocha 

Serves 2 (or 1 depending on how thirsty you are ;)) 

1/4 Cup Peanut Butter

1/2 Cup Chopped Reese’s Peanut Butter Cups

1 Cup Milk

1 Shot of Kahlua Liquor

1/2 Cup Ice (approximately 4 cubes)

Whipped cream – – optional, to fancy’er up

Green sprinkles – – optional, but everything is better with sprinkles.


Using your blender, add all of the ingredients above.

Blend until smoothie consistency.

Then drink a wee’oh’bit – – Join the celebratin’ fer the grandest time ta’ be had……that would be my Irish accent 😦 – – I won’t do it again , promise.

… hmmm – awkward.

Mandarin Sesame Nutty Noodles

I swore I would never sing in front of a large group of people ( can you say, off-key much 😦 ?!?), but since this blog is where I go to just be me …….

This is a double-whammy post, I’ve got dinner/lunch covered and I also just serenaded you 😉

I like you – – I really really like you ( you can also tell I really like you, because I didn’t tape myself actually singing this song)

And because I like you, I’m continuing the peanut butter pandemonium !!

These noodles are creamy, with a little zing of spice, they’re quick and easy – –

In a bind – just use your mind – – make these nutty noodles 😉

Mandarin Sesame Nutty Noodles

Nutty Noodle Sauce

1/2 Cup Peanut butter

1/2 Cup Kraft Mandarin Orange Salad Dressing

1 Tbsp Marmalade

1/8 Cup Light Soy Sauce

Nutty Noodles:

3 Lbs Flank Beef thinly sliced

1 Tbsp Salt

1 Tbsp Black Pepper

1 Tbsp Onion Powder

1 Tbsp Ground Ginger

1 Tbsp Sriracha

110 Grams Spaghetti

1 Tbsp Sesame Oil

1 Cup chopped Brocoli

1 Cup sliced Celery

1 Cup sliced Green Pepper

1 Cup sliced Carrots

1/2 Cup sliced Onion

3 Tbsp Green Onions (for Garnish)

2 Tbsp Sesame Seeds (for Garnish)


In a small bowl, add all of the Nutty Noodle Sauce ingredients and mix until well combined.

Set aside until, you are ready to add to your noodles.

In a separate bowl, mix together beef, salt, black pepper, onion, ground ginger and sriracha sauce. Allow to marinade, while you prepare all of the other ingredients.

Next, chop all of your vegetables. Feel free to add more – or even less … it’s your noodles, make them as nutty as you’d like them to be!


Next, boil your spaghetti as directed on the package – normally boiling for 6-8 minuets. When finished, drain all of the excess water.

Then, over medium-high heat, add your sesame oil to a large wok ( a frying pan, will work just as well :)). Add your marinated beef. Cook for 3 minutes, until the beef begins loosing it’s pink-tone. Then, add your vegetables.

Cook for 3 more minutes

– – you really just want the vegetables to be heated, by cooking them for such a short time, you are ensuring they still have their yummy crunch.

Add your nutty noodle sauce.

And now, your noodles.

Mix it – dish it – dress it -eat it!
