Woooohooooo …. Heh. While most of us ( moi avec mi familia … yes, that was French and Spanish all in one) celebrated Thanksving over a month ago I have an extra special recipe for all of my American readers.

Pun’kin pie… bars.

Also, I’m being super sneaky this year and celebrating thanksgiving twice because my sweet baboo ( ala Sally Brown) and I are in ‘Merica this week!! Bring on the turkey, pun’kin pie and extra stretchy pants!!

I’m normally not a pumpkin pie person, growing up my mom made a very traditional Trinidadian version – no crust – lots of spices – with huge chunks of ginger ( even though I think this might have been a mistake).

What’s a pie without crust?!? … especially, when I made a crust out of OREOS!! Pumpkin Spice OREOS!!  I did however take a note out of her book, and spiced this recipe up – and added the fresh ginger … just a little and minced it as much as I can. And taaa-daaa I’m a pumpkin pie looovvaaaahhh … it could just be the oreos… or the magic powers that are in pumpkin spice.

Mehh. After today, don’t we all just move onto nutmeg and chestnuts anyway … heh. Kidding. Kind of. Starbucks, I love you.

Pumpkin Spice Oreo Pumpkin Pie Bars

Ingredients

2 cups pureed pumpkin

1 tablespoon ground cinnamon

1/2 teaspoon ground cloves

1/2 teaspoon ground ginger

1/4 teaspoon fresh grated ginger

½ teaspoon ground nutmeg

1/4 tsp ground cardamom

½ teaspoon salt

¼ teaspoon Garam masala

1 can Sweetened Condensed Milk

2 large eggs

1 tsp vanilla

21 Pumpkin Spice Oreo Cookies (crushed to a fine crumb)

5 Tbsp melted butter

Directions:

Preheat oven to 425°

Line a large rectangular baking pan with greased foil.

In a large bowl, combine oreo crumbs and butter.

Add to bottom of prepared rectangular pan.

Bake for 5 minutes.

Remove from oven.

In a medium microwave safe bowl, add pumpkin puree, spices, salt and fresh ginger Microwave for 2 minutes.

Allow mixture to come to rooms temperature, it should be warm to the touch. Whisk in remaining ingredients.

Pour into crust and bake for 15 minutes.

Lower the heat to 350, and bake for an additional 45 minutes.

Remove from oven and allow to cool.

Slice and enjoy.

IMG_9037Just a note ( and if you’re not super hungry right away) – if you refrigerate the bars for at least 45 minutes, they slice extremely clean.

S’Moreo Banana Bread with S’Moreo Cookie Butter

Especially when said banana bread is slathered in cookie butter. Homemade cookie butter with coconut oil, and everyone is saying coconut oil is good for you and things – which means, this cookie butter is pretty much celery.

While holding on to every inch of summer, have you guys tried the S’more flavoured oreos .. which I’ve coined S’Moreos( … go ahead Christie you can claim the name) – they’re goooooooooooood! I really like them, sweet but not crazy sweet.

So I threw it in banana bread and called it breakfast aaaaaaaaannnnnddd I made butta with it. Not just butter, like in proper English butter … this is seriously butta … it’s so good I was tempted to lick my blender risking getting cut.

S’moreo Banana Bread

Ingredients

  • 2 cups Flour
  • 1/2 cup Sugar
  • 1/2 cup brown sugar
  • 1 teaspoon Baking Soda
  • ½ teaspoon sea Salt
  • ½ cup Olive Oil
  • 2 Eggs
  • 3 very ripe Bananas, mashed
  • 1 teaspoon Vanilla
  • 5 Crushed S’more Oreo Cookies

  • Preheat oven to 350 degrees and spray a bread pan with non-stick cooking spray
  • In a large bowl, whisk together dry ingredients; flour, sugar, baking soda and salt
  • Add oil and eggs, one at a time.
  • Add mashed banana and vanilla, beat well
  • Fold in your cookies
  • Pour into pan and bake for 60 minutes

S’moreo Cookie Butter

  • 16 S’more oreo cookies
  • 1/8 cup coconut oil at room temperature

Combine both the oreos and the coconut oil in a food processor or blender. Pulse for 3 minuets – the butter will seem really thin ( that’s okay!!) as your butter cools, it will solidify.

Snack Cupboard Cookies

I don’t even want to write much in today’s post…. Seriously the more I talk and ramble on (even though I adore your beautiful faces) the longer it’s going to take you to make these cookies.

I know I often say, you need these cookies/cake/bread ( I heart carbs clearly) when I post a recipe– and I’m normally right … but this time, YOU ACTUALLY NEED THESE COOKIES, it’s like a do-or-die situation .. except not, and I could just be acting over dramatic or dealing with the effects of a major sugar high.

Now I must warn you – nothing about these cookies are healthy – except everything about them is delicious! Sweet – Salty – Chewy – Crunchy – YUM!

These are not the type of cookies, you eat if you want to be dainty over tea. No, no – these beauties are chock full of M&Ms, pretzels, Mini Rolos, Oreos & lays chips; they’re the type you face-plant into and eat cookie monster style not leaving a crumb of evidence of their existence.

Calling all major junkies … err … junk food lovahs – clear out your snack cupboard, it’s time to make coooooooooooooooooookies.

I blame the sugar … and m&ms … and rolo – they’re so little and cute.

Snack cupboard cookies 

Ingredients:

  • 1  cup of all purpose flour
  • 1/2 tsp. of sea salt
  • 1/4 tsp. of baking soda
  • 1/2 cup of butter at room temperature
  • 1/2 cup of tightly packed light brown sugar
  • 1/3 cup of granulated sugar
  • 1 egg (beaten)
  • 1 tsp vanilla extract
  • 2/3 cup almond M&M Candies
  • 1/2 cup crushed Potato Chips
  • 1/4 cup broken up pretzel pieces
  • 1/4 cup mini oreos
  • 1 cup mini rolo chocolates
  • 24 pretzels for topping

 Directions:

  1. In a medium bowl, sift together the flour, baking soda, and salt. Set aside.
  2. In a larger bowl, beat the butter and sugars together.
  3. slowly add the egg and vanilla extract. Beat to combine, scrape down the sides of the bowl.
  4. Add the flour mixture and beat just until there are no more streaks of flour. Stir in the M&Ms, chips, pretzels, oreos and mini rolos.
  5. Preheat the oven to 350F. Line baking sheets with parchment paper. Scoop out dough into 24 mounds . Top each cookie with 1 pretzel.  Leave about 2 inches between each ball. Bake for 10 minutes. Allow the cookies to cool on the baking sheet for a few minutes before removing.

Halloween Chocolate Funfetti Cookies

… I’ll stop, I’m already scared. I wish I could tell you that I love Halloween – I don’t. I don’t see why someone would want to purposely be scared or scare other people.

I’m a total chicken – I still call my mom, when walking to the train/bus station and it’s dark outside … I wish I was kidding.

This weekend I was watching the movie Hook (yes, the children’s movie) and Mr. LTSL told me to change the channel because it sounded scary … we’re pretty much besties!! I stinking love that kid.

So, I won’t be dressing up for Halloween – there are no trick-or-treaters in our neighborhood … instead I’ll be waiting for Saturday when all the candy goes on sale and then I can take it all and bake it in browines … or cookies … or c ake … or who am I to be biased?!?! – all 3!!

But just because I shitake mushrooms   at the slightest loud noise, and you won’t find me wearing a mask — it doesn’t mean I can’t sprinkle a little Halloween goodness all up in this joint!!

Plus, the Halloween oreos looks so cool!!

Halloween Chocolate Funfetti Cookies

 1 Cup butter at room temperature

1 ¼  cup packed light brown sugar

½  cup granulated sugar

2 large eggs

1 Tablespoon pure vanilla

3 cups all-purpose flour

½ cup cocoa powder

1 teaspoon sea salt

1 teaspoon baking soda

1 bag Halloween oreos ( I ended up using 12)

Halloween sprinkles

Directions:

Preheat oven to 350 degrees F.

In a large bowl , cream butter and sugars. Add in eggs and vanilla until well combined.

In a medium bowl mix the flour, cocoa powder, salt and baking soda. Add to the wet ingredients.

Using a cookie scoop, sandwich two scoops of cookie dough around an Oreo ( it’s like a chocolate oreo hug!!).

Roll in a bowl of Halloween sprinkles

Bake cookies for 12 minutes.

Double Cookies and Cream Nutella Cookies

I feel like I owe you big time!! For my lack of posting … especially my lack of posting of my own recipe! The good news is, I do have a good reason for my MIA-ness …. I spent the better part of August fasting for Ramadan and then a couple of days after celebrating Eid, I flew off to Trinidad for a little vacation.

Instead of saying sorry for running away …. I’ll hypnotize you with deliciousness 🙂 I do it out of love.. I love you – – and I love cookies.

Last Saturday, a group of Smart Cookies and I took part in Living The Sweet Life’s first Cookie Crawl, so naturally as if I didn’t eat enough cookies last weekend, I thought this weekend I would share the cookie love with you.

Calling all cookies and cream lovers!! This one is for you …. add some nutella to the mix and you have a fudgy decadent cookie that’s just calling for a tall glass of milk. This is the perfect I’m sorry cookie … it’s also the perfect “hi friends, I went on vacation and spent most of my time at the beach so I didn’t get you anything” kind of cookie …. just saying  – – in case anyone is in such a situation.

Awkward.

*cue the cookies*

Double Cookies and Cream Nutella Cookies

1 1/2 cups Flour

1/2 Tsp Baking Powder

1/2 Tsp Baking Soda

1/2 Tsp Sea Salt

1 Tbsp Cocoa Powder

1/2 Cup Butter – -at room temperature

1/2 Cup Nutella

1/4 Cup Granulated Sugar

1/4 Cup Brown Sugar

1 Egg

1 Tbsp Vanilla extract

1 Cup Hershey’s Cookies and Cream Kisses – – coarsely chopped

Directions:

Preheat oven to 350 oc and prepare cookie sheet for baking.

Whisk together flour, baking powder, baking soda, sea salt and cocoa powder.

In a large bowl; mix butter, Nutella,  granulated sugar and brown sugar.

Next, add the egg and the vanilla extract.

Add the dry mixture to the wet and mix well.

Last, add the dose of double cookies and cream – – kisses and Oreos.

Form using an ice cream scoop and bake for 10 minutes ( or 12 for a crispier cookie).

Though this cookie is screaming a glass of milk to me – – I know people pair their cookies with tons of other things. Some prefer a cup of coffee … other’s don’t dunk, they just want to enjoy the cookie… maybe you top you cookie with a little peanut butter ?
