Open-faced Pineapple Turkey Summer Slider

It’s Monday, and it seems like your socks need to be rocked.

Drop your glasses, shake your asses

Face screwed up like you having hot flashes

Which one, pick one, this one, classic

 … *gasp* bad words

Also, that song will now be in my head all day … I’ll be strolling down the street , yelling Eve at the top of my lungs.

That’s some classy stuff right thhhuuurr.

I annoy myself … on the constant. True story.

I like it when my food looks pretty, I feel like it’s half the battle.

Especially these days, I’m trying to eat healthy and I know that healthy doesn’t have to taste or look like cardboard but sometimes it can get boring. A woman can only drink so many smoothies, and eat so many kale / spinach salads.

I’m on a new sweet-salty-savory combo kick these days. And pretty – when life fails, get pretty.

And then I made this pish-posh meal. It looks fancy pants, but is a breeze – that’s the good stuff. Wow your tummy and guest by making it seem like you got all Haute and bothered, when actually you’ve been sipping margaritas with your feet in the pool all day.

I actually had no intention of writing about this recipe, therefore I have little to no pictures, but then I tasted it.

And it would be wrong ( and probably a little greedy) if I didn’t sprinkle some sum-sum-summaaa time in your life.

Annoyed. I know. Sorry.

Sunday’s With Joy : Pineapple Upside Down Earl Grey Tea Cake

Pineapple Upside Down Earl Grey Tea Cake

Cake.

It’s a magical thing. Some how it’s able to celebrate, cure, be delicious, be a good friend and do it all looking oh-so-sassy!!

I need this cake today, I feel like I need cake every day – and if I could, trust me, I would. But today’s different, I need a slice ( or two). It’s been a rough week. Work has been nuts, after hours I’m meeting with potential clients, filling orders, planning a wedding, recipe testing and all in that mix, I manage to get some sleep.

SWJPUDC

Speaking of sleep … you know that person you see every single morning sleeping on the train – – that’s me. Two things, first – you know I’m the sleeping lady … DO NOT sit next to me if you plan on talking on your cell phone at 6:45 am. Who’s up and needs to chat every.single.day at 6:45?! Second, thank you kind people who gently tap me when we get to my stop … I love you. And if possible, I would share this cake with you. You deserve a slice or two.

And so, my plans for this weekend … nada!! I want to kick back, do nothing at all and eat cake. Will it happen? –  Doubtful … but I’ll try my best. Let’s start with the cake 🙂

Joy did her funky magic and added tea to cake. Remember when I did that to muffins? And then I did it again? Joy is cooler, she made petite cakes and then dunked them in frosting … her’s are pretty … delicate and delicious looking. Buy her book, make her cakes, and you’ll see.  I took her idea and did my funky magic.

I added earl grey instead of chamomile, skipped the honey frosting but added some extra butter – brown sugar – pineapple and cherries. It’s a beast of beauty. One that I will get to know at least once ( maybe twice … or thrice ..) this weekend.

Adjustments:

Earl grey tea used.

Didn’t make, or add the frosting.

Additions:

1/4 Cup Butter

2/3 Cup Brown Sugar

3 Slices of Fresh Pineapple, cut into 1/4 segments

15 cherries ( or enough to make a pretty circle)

Melt 1/4 cup butter and pour into cake pan. Sprinkle brown sugar over melted butter. Arrange your pineapple and cherries in a pretty pattern. Cake – it should be simple, and pretty.

The rest, was all Joy.

Pina Colada Banana Bread

Summmaaa summma summmaa timmmmee!!

It’s coming!!

Bring on the bright sunshine, beach trips, late night bar-be-ques and endless ice cream .

Commeeeonnn down … hot sticky sweaty feeling, frizzy hair, heat worthy standing in the freezer and getting so cranky that you want to just be left alone.

Summer. I’m. Ready.For.You.

Speaking of summer – – I’d like to do my civic duty of the day and make a public announcement.

*Ahem ahem*

Dear Ladies and Aliens,

If you’re going to wear flip-flops or sandals of any sort (yepp, even your cute sling backs) PLEASE FOR THE LOVE OF CUPCAKES AND ALL THAT IS SWEET

– – get your pedicure on!!

I’m not talking fancy pants pink sparkles (although, it would be cute 🙂 ) – – it doesn’t have to be over the top, just keep your little tootsies neat and tidy.

There’s little that’s more gross that yucky-smelly looking toes.

… and now, I’ll proceed to discuss an oh-so-yummy bread with you  ( … sorry for grossing you out before)

The good news is, you can bring summer to your tummy without having to deal with grimy toes, frizzy hair and sweating buckets ( I’m really not helping on the grossing out front) – – let’s get back to the goods.

Bread.

Pina Colda Banana Bread

3 Medium Bananas ( preferably on the verge of going bad)

1/4 Cup Vegetable Oil

1/2 Cup Sugar

1 Tsp Coconut Extract

1 Tsp Rum

2 Cups Flour

1 Tsp Baking Soda

1 Tsp Cinnamon

1 Tsp Sea Salt

1 1/2 Cups Diced Pineapple

1/2 Cup + 3 Tbsp Grated Unsweetened  Coconut  ( separated)

 Directions:

Preheat oven to 350 oc. Prepare a 9 inch square cake pan ( you can also use a loaf pan, whatever tickles your fancy )

In a plate – smushify your bananas

Banana Murder 😦

Pour mashed bananas into a bowl. Add oil. Then the sugar. Now the Coconut Extract

and last – – a splash of rum 😀 Mix until well combined.

In a separate bowl – sift together all of the dry ingredients.

Flour – Baking Soda – Cinnamon and Sea Salt

Then, combine your wet ingredients with your dry. The dough will be very sticky – not to worry 🙂

Add the diced pineapple and 1/2 cup of shredded coconut. Miiiiiiixx.

Fill your prepared pan and sprinkle with remaining shredded coconut. Bake for 45 minutes, or until the bread passes the toothpick test.

So kiddos stay inside with the cool AC blasted, slather on some butter on this baby and bring summaaa to your tummy

Stay Sweet
