Sweet Mint Popcorn Chocolate Cookies

Have you seen the new Sweet Mint Popcorn?!?! I’m not even a mint fan and it’s a whole new level of addiction. It’s goooooooooooooooooooooooood! And crunchy, and minty, and sweet, and heeelllooo Elf, Home Alone, Love Actually, Serendipity movie marathon while downing the bag!!

And so true to my nature, I mock it all up and toss it in some cookies!! …. And then down all of them during the movie marathon!!

I dedicate these cookies to my bestie, even though she hasn’t eaten them, I thought of her the entire time while making them. There’s no one I know who loves mint and chocolate more than her … not kidding, it’s kind of like my chocolate peanut butter addiction.. except on a whole new level … not kidding, like Aladdin’s whole new world kind of level. It’s very possible that I’ve now successfully scarfed down enough cookies that I no longer know what the heck I’m talking about… not kidding!

Sweet Mint Popcorn Chocolate Cookies 

6 tablespoons butter, softened

1 cup sugar

2 eggs

1/4 teaspoon mint extract

1 ¾  cups all purpose flour

¾  cup cocoa

1 teaspoon baking soda

1 teaspoon sea salt

1 cup sweet pepper mint popcorn + 1 cup for topping

½ cup vanilla frosting

½ tsp mint extract

Directions

Preheat oven to 350

Cream butter and sugar together.

Add in eggs, one at a time, beating well after each addition.

Add in 1/4 tsp mint extract.

In separate bowl, stir together flour, cocoa, baking soda and salt. Add flour mixture to Butter mixture.

Fold in popcorn.

Scoop dough onto prepared cookie sheet – bake for 12 minutes.

Remove from oven and completely  cool cookies.

Once cooled, in a separate bowl, combine frosting and mint extract.

Microwave for 30 seconds.

Drizzle onto cooled cookies and top with popcorn.

Toffee Malted Pumpkin Spice Popcorn

Are you fine looking folks ready for pumpkin season? I’m pretty impressed that most of the pumpkin madness at least waited for mid September – it seems like last year I had an ice cream in one hand and a Pumpkin Spice Latte in another!!

Can we think of today’s recipe as a transition snack … you know, snacky like summer ( although, I’m down to snack on popcorn no matter what the season is!) and warm and cozy like fall … and addicting. Man – oh – man this popcorn is ADDICTING!!

And I used smart pop so I pretty much just ate a bowl of celery … or something like that. heh. either that, or I’m starting to bulk up for winter … you know, like the bears.

My justification skills just got to a whole new wicked-amazing level.

Toffee Malted Pumpkin Spice Popcorn

  • 3 Tb. powdered sugar
  • 1 1/2 Tb. Pumpkin spice
  • 2 Tb. malted milk powder
  • 1 tsp. salt
  • 2 tbsp Skor chips
  • 1 bag ready-made popcorn ( or 2 bags, smart pop)

Directions:

  1. In a small bowl, mix the powdered sugar, pumpkin spice, malted milk powder, salt and toffee chips together. Set aside.
  2. Pop the popcorn, and place in a large bowl. While still hot, toss in malted pumpkin powder
  3. then pour the chocolate malt powder over the top and toss vigorously

Popcorn … Popacorno popacorno, that’s popcorn in Italian (name that amazing t.v show) … hehe ohhh Schmidt, you lovely lovely schmidty-roo!!

You guys need this popcorn, it’s part of a healthy diet and shnidzz … it’s not, but popcorn is a whole grain, so do the dirty work and justify the healthification.

Also, HAPPY ALMOST ST. PATTY’S DAY … are you doing anything special to celebrate? Making stew, eating green stuff, drinking green stuff, running away from any bar because it’s going to be crazier than the new box of marshmallow-only lucky charm cereal?!?

By eating this popcorn, you’re really just doing your part to help society get their irish on … also, it’s the weekend. And booze.

 Irish Car Bomb Popcorn

1 bag microwave popcorn – popped

3 cups of granulated white sugar

1/4 cup Guinness beer

¼ cup Baily’s Liquor

¼ cup Whisky
3 Tbsp unsalted butter
1 Tsp rum extract
1 ½  tsp salt
1 ½  tsp baking soda

  1. Place popped popcorn in a large bowl or foil roasting pan (this works great if you have one available).
  2. Line 1 large baking tray with foil
  3. In a large saucepan, combine sugar, Guinness, Bailey’s, Whisky, butter, Rum Extract, and salt. Heat over medium heat, stirring continuously until sugar melts and caramel becomes a light brown.
  4. Add the baking soda and continue to stir keep stirring. NOTE: The mixture doubles up very quickly!!
  5. Remove from heat, pour over the popcorn.
  6. Spread the popcorn mixture out on foil lined sheet pans and allow to cool at least ten minutes before eating.

I woke up this morning and it was March…

MARCH, sugar-pies … MARCH!! For the love of sprinkles, why is the year just whizzing by??!?

– good news is, spring is on its way 🙂 .

Come to mama sunshine, chirping birds and little fluffy bunnies that lay Cadbury chocolate eggs 😉

Besides those little chocolate eggs, and peeps popping up all over the place – – March is going to be an exciting month!! A busy one – – but SUPER DUPER SPARKLY exciting!! Stay tuned for all the details.

You know what else, March is National Peanut butter month 

In case you didn’t know I am a peanut butter addictfeen – – I’m totally one of those little ladies, in the corner of the room rocking back-and-forth if I don’t get my peanut butter fix.

To say the least, I’ve got it bad!!  

And instead of driving myself bonkers and resisting the urge – – I figured I might as well embrace it and spread the peanut butter on thick!

Sooo… only way to kick this month off would be to take the royal route!!

This idea of taking regular (boring) popcorn and making it out of this world, is taking the blog world by storm!! Seriously, all the cool kids are doing it.

Okay, I think that’s enough gibber-jabber … let’s get down to this Jail house rock ….

The King’s Can’t Help Fallin’ in Love Popcorn

8 Cups Plain popcorn~  4 microwave bags

3/4 Cups Light Corn Syrup

1/4 Cups Brown Sugar

1/4 Tsp Peanut Butter Extract ( bought here ;))

2/3 Cups Smooth Peanut Butter

1/2 Cups Peanut Butter Chips

1 Cup Bacon ~ 7 slices – cooked and coarsely chopped

1 Cup Banana Chips

3 Tbsp Bacon Bits

Directions:

Over Medium-high heat, fry uppp the porker!!

Once nice and crispy, remove and allow to cool. Then, chop the oinker into coarse pieces

Next, Pop your popcorn. After each bag is popped – pour into a very large mixing bowl.

Add your chopped bacon and banana chips to the popcorn.

Preheat oven to 350 oc. Also, prepare 2 medium sized cookie sheets – – or 1 large one.

Then, over Medium heat, mix together corn syrup and brown sugar. Simmer until the sugar is completely melted and small bubbles begin to form

Remove from heat and add in your Peanut Butter. Mix well until melted. Last add your peanut butter extract.

Carefully (please be careful … it’s so hot – – just ask my fingers :() pour your entire hot mixture over the popcorn. Using a spoon, combine so that all of the popcorn is evenly coated.

Now, evenly spread your popcorn mixture onto the cookie sheet.

Bake for 20 minuets, and the delicious smell of peanut butter infiltrates every nook and cranny of your kitchen 🙂

Remove from oven and allow to cool.

Now,  time to crown the king!!

Melt your peanut butter chips in a microwave safe bowl – this can be done by heating the chips in 20 second intervals until they are all melted.

Drizzle the liquid peanut butter all over the popcorn – – the two will begin making love …. now!!

Last but not least – – take this to the next level by … sprinkling on your bacon bits.

Allow to cool for 10 minuets and then …. have your way with this Big hunk o’ love
