S’Moreo Banana Bread with S’Moreo Cookie Butter

Especially when said banana bread is slathered in cookie butter. Homemade cookie butter with coconut oil, and everyone is saying coconut oil is good for you and things – which means, this cookie butter is pretty much celery.

I’m about to have a crazy-fun-food filled weekend and I’m sooooooooooooo excited!! Toronto’s Front Street Foods; which I have to say has been such a huge success – I vote that it becomes an annual summer shindig the city holds – the Kensington Krawl; which I plan to blog about – but pretty much is a stroll through Toronto’s Kensington Market learning about the History and tastes offered annnnnnndddd Sweetery Toronto … which I think is the FIRST EVER all sugar coma induced foooood faaaiiiiiirrr!! You’ll be sure to find a zillion-trillion-billion pictures on instagram; im trying to go easy.


I can’t wait! Tell me, tell me , tell me what are you doing this weekend? Is it summery? Are popsicles involved? Ice cream? S’mores, sunshine and barefeet in the grass?!?! Dear Summer, please never end – except fall  I love your comforting spices, tastes and fashion. But I’m not ready to let go of you summer!!


While holding on to every inch of summer, have you guys tried the S’more flavoured oreos .. which I’ve coined S’Moreos( … go ahead Christie you can claim the name) – they’re goooooooooooood! I really like them, sweet but not crazy sweet.

So I threw it in banana bread and called it breakfast aaaaaaaaannnnnddd I made butta with it. Not just butter, like in proper English butter … this is seriously butta … it’s so good I was tempted to lick my blender risking getting cut.


S’moreo Banana Bread


  • 2 cups Flour
  • 1/2 cup Sugar
  • 1/2 cup brown sugar
  • 1 teaspoon Baking Soda
  • ½ teaspoon sea Salt
  • ½ cup Olive Oil
  • 2 Eggs
  • 3 very ripe Bananas, mashed
  • 1 teaspoon Vanilla
  • 5 Crushed S’more Oreo Cookies

  • Preheat oven to 350 degrees and spray a bread pan with non-stick cooking spray
  • In a large bowl, whisk together dry ingredients; flour, sugar, baking soda and salt
  • Add oil and eggs, one at a time.
  • Add mashed banana and vanilla, beat well
  • Fold in your cookies
  • Pour into pan and bake for 60 minutes


S’moreo Cookie Butter

  • 16 S’more oreo cookies
  • 1/8 cup coconut oil at room temperature

Combine both the oreos and the coconut oil in a food processor or blender. Pulse for 3 minuets – the butter will seem really thin ( that’s okay!!) as your butter cools, it will solidify.




Rice Krispy S’more Brownies


I need these brownies today — this weekend, I had a bit of a crisis … I set out to do my usual kitchen shenanigans and right in the middle of swimming in delicious baking …I ran out of flour.


How is that even possible?!!? In my kitchen, there are 5 things I never run out of :

  1. Butter
  2. Sugar
  3. Flour
  4. Eggs
  5. Wine

For the love of all that is delicious – WHO RUNS OUT OF FLOUR?!? So instead of being practical and going to buy some … I just drank wine.


Hence the brownies. Sweet Week , Monday saving trashed up brownies.

But not just any everyday-joe-schmoe brownies … these brownies are straight up craaaaazzzyy. Nutso. Not just filled with fudgy-goodness – but stuffed with rice krispy squares and then toasted, gooey marshmallows. Welcome to the crazy-train.

Rice Krispy Smore Brownies


1 cup Semi-sweet chocolate chips
3/4 cups room temperature butter
1/2 cup dark chocolate, chopped
1 1/2 cups granulated sugar
3 large eggs plus 1 egg yolk
1 tbsp vanilla extract
½  cup  all-purpose flour

¼ cup cocoa powder

1/4 teaspoon sea salt

8 Ready made rice krispy squares cut into smaller squares ( you can rip them a part, they don’t have to per perfect!!)

2 cups large marshmallows

Preheat the oven to 350°F. Line an 8×8-inch baking pan with foil and spray with nonstick cooking spray.

In a large microwave-safe bowl, combine the chocolate chips, butter, and dark chocolate. Heat in the microwave for 1 minute then stir. Continue to heat in increments , until the mixture is melted and smooth.

In a large bowl, beat the eggs and sugar until light and thick.  Add the vanilla extract. Stir in the cooled chocolate mixture with a rubber spatula. Add the flour, cocoa powder and sea salt, folding gently until combined.

Pour ½ the batter into the prepared baking pan. Layer with rice krispy square pieces. Layer with rest of batter.

Bake for 35 minutes. Remove from oven, top with marshmallows and broil until the mallows are toasted.

Remove from oven and using 2 forks spread to cover entire brownie surface, broil for 3 more minutes.

Remove from oven. Allow to cool completely and slice.

Sunday’s With Joy : S’More Brownies

Sunday’s with joy are BACK IN ACTION!! *woooo hoooo*

To be honest, there was no way I could skip this week’s recipe the yum-factor of this bad boy is over the moon!!  – – and you’ll probably be able to tell, I went a little picture happy (sorry …)

Have you bought her book yet?.. whhhyyy nnnnooottt?!?!!

GET ON THAT – – I’ve used many cookbooks, but this one … everyone and their mom’s cousin needs this book. And I’m not just saying that …. All the ladies that participate in SWJ have only had good things to say about it. If over 100 ladies can’t convince you  – – I think I have something that will work!!

Deep luxurious fudgey- chocolate

Ever so slightly sweetened Graham crackers

Toasted gooey marshmallows

… all in one place.

Somebody, wake me this must be a dream.

But of course because I’m a psycho and actually conjure up sweet treats in my dreams ( is this normal – – please tell me, you do this too. No … just me – – what’s that, I should go see someone about this little predicament? – – noted. And I should probably mention to them I just had a conversation WITH myself. )

— back to my point. Because I can’t leave the great alone without adding a little LTSL spin on it , I added entire s’mores to Joy’s S’mores brownies. What can I say, I can’t help myself when it comes to toasty marshmallows.

S’More Brownies

* In addition to the ingredients listed by joy, you will also require

  • 24 Graham Crackers
  • 12 Large Marshmallows
  • 12 Squares of Chocolate

  • On a large tray arrange 12 Graham Crackers, top each cracker with a marshmallow
  • Broil in oven until tops are slightly charred – – keep your eye on the prize, they will burn extremely easily!!

  • Top with chocolate and then the other graham cracker.

Sweet Treats!! It’s DECEMBER


I love love L.O.V.E this time of year – – hot chocolate – – cookies – – cranky parents in the malls – – crying children – weird old men dressed as Santa Clause – – Eggnog – Cake – Chocolate – Family – Friends … did I mention cookies?!?!

In our house, Christmas is still as magical as it was when I was little. Our christmas lights are up – – Christmas carols are blazing through the halls from room to room – – the tree is standing tall and fully decked out waiting for the big guy to arrive. We have this christmas thing on lock!!

From today forward, my oven will get a hot and heavy workout like it’s never seen before. Breads, cakes, cookies, pies, crumbles – – we’re about to live the sweet life 😉 And so, it’s only fitting that we start this amazing time of year of with a bit of a


I did something a little crazy-tastic – – but crazy-tastic actions like this normally leads to something SUPER YUM-TASTIC and me eating raw cookie dough by the spoonful (… not that I did this or anything like that).

Follow this math Sweet Hearts:

Chocolate Chip Cookie Dough + Extra Chocolate Chips + Marshmallows + S’more POP Tarts = HOLY MOLY YUM!!

Yes… Yes… I did just do what, I just did & It was DELICIOUS!

I’ll cut to the chase – – you want to jump in and make love to these little puppy’s. I guarantee they will make your little heart as happy as pie (p.s – – I have no idea where I come up with this stuff … happy as pie, who says that?!?!).

It’s simple. It’s Delicious. And if you leave these out for Santa Clause I guarantee you’ll get exactly what you asked for 🙂

*Popped* Toasty Chocolate Chip S’more Cookies

3 Cup Flour

1 Tsp Baking Soda

1 Tsp Sea Salt

1 Cup Butter (at room temperature)

1 Cup Brown Sugar

1 Cup White Sugar

2 Eggs

1 Tbsp Vanilla

2 Cups Mini Marshmallows

1 Cup Chocolate Chips

6 S’more Pop Tarts (cut into small squares)


Preheat oven to 350oc. Lightly spray cookie tray or line with parchment paper

Mix together flour, baking soda and salt. Set aside.

In another bowl, cream together butter and sugars until light and fluffy. Add eggs and vanilla.  Mix in the dry ingredients, marshmallows and chocolate chips.

Add small squares of pop tarts. And form into magical cookie dough balls (roughly 2 tbsp / cookie).

In case anyone is wondering … yes they taste amazing as is – – but get these bad boys in the oven.

Bake for 15 minutes. Let the toasty magic do it’s work … the wait is TOTALLY worth it. I won’t lie – – this was agonizing and I wanted to jump in my oven at any chance I got. But alas my 15 minutes (aka a lifetime) of waiting was over and look what jumped out of my oven.


Sugar monsters, this is your ticket into Santa’s good books!! Make these, leave the big guy a glass of milk and you’re as good as gold. 

Yes, maybe you’re using a little trickery to get what you want … but a little sugar never hurt to sweeten a deal.
