Not-so-traditional Irish Soda Bread

HAPPY ST. PATRICKS DAY!!

Confession : I’ve posted many st.patty’s day appropriate snacks on LTSL but, can anything compare to delicious bread fresh from the oven slathered with butta … not even butter or forget margarine … you want enough butter on this pot of gold, that you start calling it butta …

Unlike most celebrations, instead of celebrating with cake today … you need bread. Stick a candle in it, do a little jig, pour yourself a drink annnndddd celebrate!!  You also need this Not-so-traditional Irish Soda Bread because you’re responsible and when you OD on Guinness, green beer or (and) whisky tonight, you know you’re going to want to curl up with something delicious.. or you could just be like me and truly believe break fixes everything.

Also this bread is actually easier than most.

No rise.

No yeast.

Big win.

Not-so-traditional Irish Soda Bread

 Ingredients

3 ½ cups all purpose flour

1 cup pastry flour

3/4 cups granulated sugar

1 tablespoon baking powder

1 1/2 teaspoons salt

1 teaspoon baking soda

1/2 cup cold margarine

2 cups cranberries

1 tablespoons fennel seeds

2 1/2 cups milk

1 tbsp + 2 ¼ tsp Cream of tartar

1 large egg

1 Tsp Orange extract

3 tbsp cornmeal

 Instructions

Preheat oven to 350°F. Generously butter heavy cast iron skillet and sprinkle with cornmeal.

In a medium dish, combine milk and cream of tartar. Refrigerate until ready to use.

In large bowl, whisk together both flours, sugar, baking powder, salt, and baking soda.

Add margarine; using fingertips to incorporate until the mixture is the consistency of corn meal. Stir in cranberries and fennel seeds.

Whisk together egg and orange extract. Gently fold into milk mixture.

add to dough. Stir just until well incorporated.

Transfer dough to prepared skillet; smooth top, mounting slightly in center. Using small sharp knife dipped into flour, cut 1-inch-deep “X” in top center of dough.

Bake until bread is cooked through and tester inserted into center comes out clean, about 1 hour 15 minutes. Cool bread in skillet 10 minutes. Turn out onto rack and cool completely.

Irish Car Bomb Popcorn

If being Irish and celebrating St. Patty’s day means 3 kinds of alcohol in one snack

Popcorn … Popacorno popacorno, that’s popcorn in Italian (name that amazing t.v show) … hehe ohhh Schmidt, you lovely lovely schmidty-roo!!

You guys need this popcorn, it’s part of a healthy diet and shnidzz … it’s not, but popcorn is a whole grain, so do the dirty work and justify the healthification.

Also, HAPPY ALMOST ST. PATTY’S DAY … are you doing anything special to celebrate? Making stew, eating green stuff, drinking green stuff, running away from any bar because it’s going to be crazier than the new box of marshmallow-only lucky charm cereal?!?

By eating this popcorn, you’re really just doing your part to help society get their irish on … also, it’s the weekend. And booze.

 Irish Car Bomb Popcorn

1 bag microwave popcorn – popped

3 cups of granulated white sugar

1/4 cup Guinness beer

¼ cup Baily’s Liquor

¼ cup Whisky
3 Tbsp unsalted butter
1 Tsp rum extract
1 ½  tsp salt
1 ½  tsp baking soda

  1. Place popped popcorn in a large bowl or foil roasting pan (this works great if you have one available).
  2. Line 1 large baking tray with foil
  3. In a large saucepan, combine sugar, Guinness, Bailey’s, Whisky, butter, Rum Extract, and salt. Heat over medium heat, stirring continuously until sugar melts and caramel becomes a light brown.
  4. Add the baking soda and continue to stir keep stirring. NOTE: The mixture doubles up very quickly!!
  5. Remove from heat, pour over the popcorn.
  6. Spread the popcorn mixture out on foil lined sheet pans and allow to cool at least ten minutes before eating.

Are you beginning to see green and white?

Do you happen to see little leprechaun’s prancing around, singing in rhyme and rainbows randomly appearing?
… are you feeling the urge to follow those rainbows to find your pot of gold – I don’t blame you, I’d do the same.

Truth is kids, we’re getting extra close to St. Patty’s day!!
Whether you’re Irish by birth or Irish by wish – this day deserves a little celebrating. Go ahead and don your finest green outfit, indulge in a little Irish Soda bread and any excuse to drink green beer is a great day to me!!

I actually forgot how delicious sugar cereal is, I’m so use to having whole-grain-low-fat-non-processed-blah-blah-blah that I actually forgot how much I loved shoveling mounds of sugar cereal in my face … not that, that happened. And if it may have happened, let’s count it as quality control 😀

Magically Delicious Lucky Charm Cake

3 Tbsp Butter

4 Cups Marshmallows

8 Cups Lucky Charm Cereal

1/2 Cup Green & White chocolate chips

Green Sanding Sugar

Cooking Spray

Star Shaped Cake Pan

Directions:

Liberally spray your star-shaped cake pan with cooking spray. Sprinkle entire pan with sanding sugar.

Next, sprinkle your green & white chips around the pan.

In a heavy and deep pan, melt your butter. Add Marshmallows and allow to get all melted and gooey.

Remove from heat and add cereal.

Pour into pan and allow to set for at least 15 minutes ( long enough, for you to bite in and now scorch the roof of your mouth 😀 … * awkward*)

Luck of the Irish Peanut Butter Chocolate Frozen Mocha

HAPPY ST.PATTY’S DAY SWEET HEARTS!!

Wooo-hooooooo …. bring on the green cupcakes … got green cookies? – yes please …. mint ice cream … suuuurrreee …. hey, are you making  green eggs? – – make me a plate… and of course, what would St. Patty’s day be without GREEEEENNN BEEEERRRRR?!?!

🙂 See why I like celebrating such highly important holidays … lol.

So really, what is St. Patty’s day – – and why do we celebrate?  the green beer of course!  it’s actually a celebration of Saint Patrick an Irish icon. It was once upon a time a highly religious celebration – – but now, everyone just wants to get their irish on and shake their shamrocks 😉 … so let’s do it good looking people.

Sure it’s early – – but let’s get the happy juice flowing and I have just the thing to get you to do an irish jig… and, it’s not green just in case, you’re weirded out by drinking something that resembles slime!!

It may not be happy hour here, but everyone know’s  today is the one day that the entire world runs in accordance to the time in Ireland – – and I believe it’s happy hour there (… maybe not, but still – – it’s Saturday) – – get your drank on, party people – – but be responsible 😦 – – seriously, be a cool temporary Irish and drink like a responsible little leprechaun, and keep your lucky charms together.

Luck of the Irish Peanut Butter Chocolate Frozen Mocha 

Serves 2 (or 1 depending on how thirsty you are ;)) 

1/4 Cup Peanut Butter

1/2 Cup Chopped Reese’s Peanut Butter Cups

1 Cup Milk

1 Shot of Kahlua Liquor

1/2 Cup Ice (approximately 4 cubes)

Whipped cream – – optional, to fancy’er up

Green sprinkles – – optional, but everything is better with sprinkles.

Directions

Using your blender, add all of the ingredients above.

Blend until smoothie consistency.

Then drink a wee’oh’bit – – Join the celebratin’ fer the grandest time ta’ be had……that would be my Irish accent 😦 – – I won’t do it again , promise.

… hmmm – awkward.
