Cinnamon cream cheese Red Velvet Whoopie pies

Happy valentine’s day – family day – long WEEKEND!!

What a week, I’m so ready for an abundance of lovey-dovey movies on T.V – some quiet time and wine … ahhh the wine!! This long weekend I seriously hope to do nothing … I say that as I type on my work laptop that I brought home #FML …

Good news is, that no matter what I’ll sleep in … until *bzzz bzzz bzzz * —> that would be my blackberry obv. #FML

But the wine .. NO ONE WILL TAKE THE WINE AWAY. I hope.

I’ve been sharing a couple valentine’s day prep recipes the last couple of weeks .. but I feel like I’ve left the best for last.

These are dense … and filled with cream cheese cinnamon goodness. Whether V-day will be spent with you celebrating over a bottle of wine, with your loved ones, or out with the girls, there’s always room for Whoop whoooooop whoooopppiiie pies!

Smoked Sea salt Triple Chocolate Threat Cookies

Happy Frrrraaaiiidaaaayy!! I have the best chocolate lovers cookie combo for your crazy cats today ( how many C-words, can I use in one sentence)  – or if you’re in a giving valentine-y mood … heeeeellllllooooo chocolate aphrodisiac – I seriously can’t believe I wrote that, knowing very well, that my mom reads this blog.

So I know not too long ago I told you these smoked sea salt chocolate cookies were the bee’s knees … well, I lied. No I didn’t they’re pretty darn-tootin-good ( I annoy me too .. it’s not just you) BUT these cookies are better.

Stretchy pants – Check

… sorry, I got a little carried away. BUT HOLY MOLY I COULD TOTALLY GO TO TOWN ON THESE COOKIES!!

I actually brought these cookies into my new office, and I had co-workers tell me this was the best cookie they’ve ever had!! Now, that could mean one of two things – either they’re being nice and want me to continue bringing in goodies or they really are stinking delicious.

The secret to this recipe is low and slow … yes, we’re still talking about cookies – stop it! These cookies are baked at 300 oc for 20 minutes – creating a shell exterior and an extremely chewy interior.

Smoked Sea Salt Triple Chocolate Threat cookies

1 cup semi-sweet chocolate chips

2 tablespoons margarine

1 cup + 3 tablespoons all-purpose flour

¼ cup unsweetened cocoa powder

1 teaspoon baking powder

¾  teaspoon smoked salt

½ tbsp coffee powder

1/2 cup granulated sugar

1/4 cup + 2 tablespoons brown sugar

2 large eggs, at room temperature

2 tablespoons whole milk

1 tbsp vanilla extract

1/2  cup milk chocolate chips

½ cup dark chocolate chips

¼ cup white chocolate chips

IMG_4747 IMG_4752 IMG_4773

Preheat oven to 325 degrees. Line two large baking sheets with parchment paper, lightly spray them with non-stick spray, and set aside.

Place the semi-sweet chocolate chips and margarine in a small, microwave safe bowl. Microwave until melted and well combined – should take about 20 seconds.

In a medium-sized bowl sift the flour, cocoa powder, baking powder, and smoked sea salt and coffee.

In a separate medium-sized bowl whisk together the sugars, eggs, milk, and vanilla.

Add the dry ingredients into the wet ingredients, and stir to combine.

Add in your melted butter/chocolate combo.

Add all 3 types of chocolate chips

Lower oven to 300 degrees and scoop batter on the prepared baking sheets, and bake for 20 minutes. Allow to rest on baking tray, for 2 minutes before transferring to a cooling rack.

Chocolate lovers UNITE!! How perfect would these cookies be for valentines day, instead of a box of chocolates?

Cupid’s Secret Kiss Cookies

Do you remember when you were in elementary school and got to decorate baskets or papers bags for valentine’s day. Do kids still get to do that? If I got to decorate one today, it would be the cheesiest thing ever – there would be tons of sparkles, tons of paper lace … I’d go straight Martha Stewart on that bad boy!!

Why don’t we get to do fun stuff like that at work – seriously kids, I know it sounds so messed up, but DON’T BE IN ANY RUSH TO GROW UP … I mean yea, it’s cool .. I get to eat cookies any time of the day, I technically don’t have a bed time ( granted, I’m seriously dead tired by 11:00!!), and I suppose there’s no home work … unless you count; running errands – cooking – cleaning – laundry – paying bills … seriously SLOW DOWN AND ENJOY.

Eat as many fruitroll-ups as possible,  and pop tarts … and make cookies, and then eat them all warm from the oven. Okay, so maybe you can be any age to do that!!

Look at these puppies, just chillin’ out maxin – relaxin … heh, they look like regular everyday red velvets don’t they?!!?

No no nooooo booo-boooos – waaaacchhhhaaaa! Secret kisses all tucked away inside and sugar dusted for that little extra special V-day lovin’ !!

 Cupid’s Secret Kiss Cookies

1 cup butter, softened

1/2 cup Granulated Sugar

1 ½  cups flour

¼ Cup sifted cocoa powder

1 Tbsp Red Food Colouring

1 package chocolate candy kisses ( I used peppermint, but you’re more than welcome to use your favourite kind)

1 Cup Powdered Sugar

IMG_3860 IMG_3866 IMG_3882

Cream butter, sugar and vanilla in a large bowl.

Gradually add flour and cocoa powder .

Beat on low-speed until well blended.

Add food colouring.

Taking 1 table spoon at a time, ball the dough around each kiss chocolate.

Make sure the entire kiss is secretly enclosed.

Repeat with remaining dough.

Chill all of the dough balls for 1 hour ( this allows the cookie to keep it’s ball shape)

Place on ungreased baking sheet. Bake at 350 12 minutes.

Remove from oven and allow to cool completely.

Roll in powdered sugar.

Wrap and gift to your funny little valentine aka dump them on a plate and begin a Bridget Jones diary marathon.
Happy Days sunshine, stay sweet xo

Love Potion aka Apple Cider Sangria

… ps, I’ve come to realize – I bake a lot with alcohol!! Not that I think I need an excuse, but I figure what I can’t drink, I’ll eat – just kidding … kind of.

I know we’re still a little ways away from valentine’s day, but trust me when I say love is in the air.

Just a couple weeks into this spanky year, and there’s talk of proposals, weddings & babies –first NO I’M NOT PREGNANT – and second, these three things can only mean L.O.V.E. A little love potion never hurt anyone and technically, this is just a mish-mosh of winter spices, some juice and booze .. lots of booze … lot of sweet, delicious, come-to-mama booze.

It’s been a rough week. I have big plans of downing this pitcher and having a scandal marathon. On that note, can we talk about my insane tendency to jump on good tv shows waaaaaayyy after the hoopla begins. It happened with friends, happened with How I Met Your Mother, happened with The Good Wife, Suits, Blacklist and now, of course Scandal. So I have crazy marathons, and then have no one to talk to about it, since everyone else is waaaaaayyy ahead of me.

A letter to my Everyday – Forever – Valentines <3

Remember when you were in elementary school, and come valentines day you’d have your fancy self-made valentine mail box hanging proudly by your desk or cubbie?
Remember being so excited to get those little cards, some chocolates and if you were lucky that cute boy you were eyeing hoping he would hold your hands under the slide at recess would come to your desk .. and oh so slyly pop a store bought valentine into your folder.

Be honest. You melted.
Valentines day … it shouldn’t be a celebration of love day – but a feel good day.
And so, I want to brighten the day of my Everyday- Forever- Valentines with a little letter.

This group of people, form my list of loves. Whether friends, family, or that cute boy I’m hoping that will hold my hand until we’re old and crazy together. I want them to know that I love them. I thank them for dealing with my senile ways … and remind them that I celebrate what they mean to me not just today but everyday.

Today, just seems like a good day to let them know ❤

❤ My Favourite Girl in the World : Mama LTSL. You are everything and anything I could ever want to be. You’re truly probably the only one who knows me inside out and I love you more than anything else in the world. I love each moment we get to laugh together, cry, complain. I love it all. You make every day, something kind of special. Your my best friend, my heart and my everything. As things and life begin to change, as I enter a new phase in my life – I want us to remain a constant. I want us to be able to celebrate the good, bad and down right rediculous. You’re my superwoman, and I admire every inch of your being. You’re kind of major and I’m only the person you see today, because of you xoxox

❤ My VeryBari : Lady, I can’t even begin to explain the role you play in my life. I love you to bits, it’s your honesty – your willingness to live life each and every day for what it’s worth. It’s the fact that you wear your heart on your sleeve and you’re not afraid to have a damn good time. At the beginning of this year, we knew 2013 was going to be something fantastic and I’m SO STINKIN pumped to be sharing every moment of the next couple months with you. I love you and can’t thank you enough for being who you are. I love you for loving me, the real me – no strings attached, no preconceived notions, or no sort of act needed … the real me. Thank you for every laugh, every late night talk, each drink, thank you for all our moments that we will never forget and the nights we will never remember xoxo

❤ My Angel : Panda. There’s a reason I call you my angel. You keep me sane. You make me laugh, when all I want to do is run away from real life and join the circus. I can’t even count the amount of times you’ve bailed me out of a stupid situation — I also probably can’t count the amount of times those stupid situations were because of our messed up antics. Thank you for being my soundboard, my live, my best friend and the sister I never had growing up. In the strangest of ways, you are my sweet escape – on the best days, you’re there with open arms ready to celebrate with me – and on the worst of days, you’re there to celebrate how screwed up life can be. I love you a million billion times over and no matter how busy life may get, no matter how much things may change I want you to know, that in the end ” it will always be us” 😉 We’ve seen over a decade of laughs, tears, wanting to rip each other’s hair out and celebrating. I can’t only hope that nothing changes. ever. Like I’ve said a dozen times, I need you in my life. Forever. xoxo

❤ My Mango-ness: To me, you’re lady love herself. You believe in that happily ever after – forever – no matter what. And I need that. I need that reminder that there’s so much good in the world. You’re just that for me, you are the good in the world. You too wear your heart on your sleeve and I wouldn’t change a thing. To be honest, all of the main people in my life play a different role – and our relationship is quite different than the ones I have with the other girls. You set the stepping stone for many milestones I’m yet to accomplish. I look up to you for guidance based on your experience with ‘being an adult’  and knowing how to handle when shit hits the fan ( can I use that kind of language on this blog? … sorry.) I love you for exactly who you are are you hope for everyone’s happily ever after. Yes, together we’ve seen each other at the top of our game and hit rock bottom … but, we’ve made it and I think that says a lot. I know we have the rest of our lives to look forward to – and you get me excited about each minute of it … thank you xox

❤ My Kiwi-licious: Giiiirrrrrrrrrrrrrrrrrrrllll … I love you because you’re ghetto fabulous 😉 I actually love you for so much more than the fact that you’re ghetto-fab. I love you because you accept me for who I am, no matter what. I never have to have a rhyme or reason for my actions, or thoughts. You support me and my decisions no matter what. You’re kind of amazing … but I don’t want that to get to your head :p I love you for your sense of commitment to living out your dreams and the fact that I can talk smack with you / about you … but at the end of the day, nothing else matters but your friends and family. You inspire me to be the best me possible. You’re my constant reminder to stay focused on making myself happy, before I can make anyone else happy. I love you lady, I’ll love you to the end of time. You reassure me, that no matter what … looking past the roller coaster ride of life, at the end of the day … my quota is all I have. You’re irreplaceable. xoxo

❤ My Mr. Sweep Me off My feet – rock my world with every heat beat: I love you. Simple. Plain. And everything I could ever dream, wish and ask for. Here’s to our forever – our once upon a time and happily ever after all in one. What we have, people dream of … it’s priceless. It’s real. It’s my wildest dreams come true and I promise you, it will never change. I love you to the moon and back … twice.

Happy Valentines day everyone, tell everyone who means anything to you – that you love them today

Canadianfied Red Velvet fudge

I was SO good for once.BEFORE an actual holiday I made a sweet treat;

I had the recipe written – photographs taken

– this little delight was even consumed BEFORE canada’s day!!

I was all wooo-hooo (p.s I’ve realized I’m a woo-girl … I’ve decided to embrace it) I’m on a roll.

Canada’s Day came and I was all – – ooooo fireworks

And then I needed a day to recup.

Before I knew it – It was the 4th of July and I was all – – ooohhh sparkly , fireworks and BBQ ( even though we live in Canada, any excuse for bar-be-que works for me 🙂 )

Let’s celebrate life instead … in a red and white fashion

(… yeasss – – that would work)

Or we could just ixnay on  celebrating anything and just eat these little morsels of love because they will give you a sugar high faster than any willy wonka factory.

On that note – – these babies are saaaawwwweeeetttt.

Like VERY sweet.

But they are yummy – -and easy and sparkly 😀

Microwave in 45 second intervals, until your mixture is smooth and velvety (this should take approximately 3 minutes).

Add vanilla, food colouring and cocoa. Working quickly, pour into your prepared pan.
