Healthy-ish Mini Whole Wheat Scotchies

Hi My loves.

It’s 2012 – I know, you can’t believe it!!  Me neither, to be honest;  but I know it’s going to be a fantastically-amazing year. You know how I know that – – because, I’m going to make it a fantastically-amazing year.

You should too. Be fantastically-amazing … it will make you smile :).

Let’s chat for a little bit, shall we? Let’s talk resolutions. – I don’t do the whole resolution thing.

I just don’t buy it. We commit to doing something, and then get all excited – do it for a while and most of us will get sick of it and then just stop. And why January 1st? If you want to get something done – –

JUST DO IT!!

Don’t wait for new years eve – – or a special date. Today’s special – – you’re alive and healthy …. DO IT TODAY!! *woot woot* that was my daily motivation.

Now, that I’ve started to be all wisdom-ist (remember how I make words up (https://livingthesweetlifeblog.wordpress.com/2011/11/24/well-thats-random/)… I apologize for my lack of  understanding when it comes to english – – and yes, it is my first language :().

Anyways … as I was saying, now that I’ve started to impart my wisdom on all you good-looking kids – – I want to help anyone who decided this would be the year they are going to get healthy. That’s right – I have a healthier recipe for COOKIES for you.

Now, THIS is how to get healthy ;)

Now, just because I said they’re healthier than my norm. don’t eat all … share them. That would be like doing a double whammy to start the year off!! ~ yummy treat for you and you’ll make a new friend.

See… 2012 IS going to be a fantastically-amazing year!!

Healthy-ish Mini Whole Wheat Scotchies

2 Cup Whole Wheat Flour

1 Cup Quick Oats

1 Tsp Baking Soda

1 Tsp Sea Salt

1 Cup Butter (at room temperature)

1 Cup Brown Sugar

2 Eggs

1 Tbsp Almond Extract

1 Tbsp Cinnamon

1/4 Tbsp Grated Nutmeg

1 1/2 Cups Butterscotch Chips

Directions:

Preheat oven to 350 oc. Lightly spray or line a cookie sheet with parchment paper

In a large bowl sift together Flour, Baking Soda and Sea Salt.

Cream together butter and sugar, until light and fluffy and pretty.

Once well combines, add the eggs.

Mix those eggs into this goodness. Next add the extract, cinnamon and nutmeg.

Now, let’s turn up the magic. Add 1/3 of the sifted dry ingredients. Mixing well after each addition.

Once you have added all the sifted ingredients. Add the quick oats.

And now… the butterscotch chips!!

Mix! Mix! Mix!

Scoop out your cookies, using a cookie scoop or using a 1 TBSP table-spoon to make mini scotchies.

Bake for 12 minuets.

Allow to cool … and then  … CHOW TIME!!

Get a little HOT & CORNY tonight

Hiii-yahhh Sugar Monsters,

I must warn you … it’s about to get HOT ALL UP IN HERE (that was my failed attempt at being cool … don’t judge, it’s not a good look for you).

I’m completely one of those hopeless romantic girls – – I believe in love at first sight … I still wish on stars and the cheesiest lines sweep me off my feet into a love coma. The more corny a gesture the nicer I think it is.

That Dirty Dancing Scene in Crazy Stupid Love – – had me GIDDY with excitement, screaming at the tv SLEEP WITH HIM YOU FOOL!! Although, let’s be honest, it doesn’t take much for Mr. Gosling to knock me off my feet (and his abs totally look like they’re photoshopped!).

I once got a birthday card from Mr. LTSL and on the outside it said “I hope you get everything you want this birthday” – – under it he wrote “because I already did, when I met you” *faints*. YEPP – – that right there … that’s some corny stuff … but it gets me under a love spell!!

I know many of you are sitting there thinking… what in the world of cupcakes is wrong with you . I don’t know. Its true .. I have problems.
But Sugar pies… the truth is sometimes… I like to get a little corny and that’s what I’ve done for YOU!! I have something a little corny for you. Expect not the kind of we were just talking about a yummier kind of corny.

HOT & CORNY Corn Bread

Hot & Corny Corn Bread

2 Cup Whole Wheat Flour
2 Cups Corn Meal
1 Tbsp Baking Powder
1 Tbsp Salt
1 Tbsp Black Pepper
1 TBSP Basil Leaves
2 Eggs
1/2 Cup Olive Oil
1 Cup Milk
1 Cup Cream Style Corn
1 Tbsp Sweet Corn Relish
9 Pimento Peppers, minced
1 Tbsp butter to top bread once finished , optional (BUT SO YUM!)

Directions

Preheat oven to 350 oC. Lightly Grease a 9 x 14 inch baking pan.

In a large bowl, mix together flour, corn meal, baking powder, salt, black pepper and basil leaves.

Add eggs, olive oil, milk, cream style corn and corn relish.
Mix! Mix! Mix!

Add minced pimento.

HOTT STUUUUFFF!!

Spoon into baking pan. Bake for 30 minuets or until golden brown. Once finished, remove from oven and top with butter.

Better with butter

Allow to cool … and slice that corny little monster uppp!!

A Current kind of Carrot Currant Mmmmuffin

Learn to Love your Muffin Tops

Are you a Muffin Top or Bottom kind of person … Which part do you eat first?. Some people start at the top… skillfully peeling off the muffin hat… working their way to the bottom until it’s all done. Others, start with the bottom … saving the top for the very end.

Now, who am I to discriminate – a muffin is a muffin in all it’s muffin-y glory and I do love a good muffin every now and then – but

Kinda gal!! Not because I like the bottom better .. in fact just the opposite. That’s right, I’ll rip the top of a muffin off … devour the bottom and save.the.best.for.last. YUMMM…MUFFIN TOP!! I also prefer my muffins plain – hold the butter – – save the jam. I want it to be just me and my muffin :).

What kind of muffin eater are you? Either way, I have a yummy for my tummy breakfast/snack/ anytime of the day kind of treat for you sugar monsters today. It’s a Current kind of Carrot Currant Muffin!!

You heard me, this carrot muffin is new .. it’s jazzy… it’s what all the cool kids are talking about. It’s the stuff the haves are eating and the have-nots want to be eating (Pretty special muffin wouldn’t you say?!? 😀 lol).

So do yourself a favour and GET.THESE.IN.YOUR.BELLAAYYY. The best part, this version is whole wheat * yahhooo– for my attempts at being healthy*. Stay hip – stay happening … stay current 😉

That's one Hip Muffin

Current Carrot Currant Mmmmuffin

2 Cups Whole Wheat Flour
1 Tbsp Ground Cinnamon
1 Tbsp Ground Nutmeg (if you’re able to use fresh nutmeg … do it!!)
1 Tbsp Baking Powder
1 Tsp Salt
1 1/2 Cups Brown Sugar (I used cane sugar … but any kind is just dandy)
3 Tbsp Melted Butter
1/2 Cup Milk
1 Egg
1 Tbsp Vanilla Extract
2 Medium Carrots Grated
1 Cup Dried Currents

Directions

Preaheat oven to 350Oc. Grease and line a 6-Muffins, Muffin Tin (or in English – a muffin tin that can make 6 muffins).

In a large bowl, mix all the dry ingredients from above (Flour, Cinnamon, Nutmeg, Baking Powder, Salt, Sugar).

Add butter, milk, eggs and vanilla to the muffin mayhem. Mix until all the ingredients are incorporated.

Grate carrots & mix with currants.

Add that gorgeous mixture, to the muffin batter party.

Paaarty Timmmee!!

Mix well and fill muffin tin.

Bake for 25 Minutes or until the tops are golden brown.
