Do cool people still say word to big bird .. can we see about making that popular again? It probably was never popular 😦

Doll faces, this cheesecake is soooooo good ( totally worthy of all of those extra ooo’s) and its easy peasy, you just have to be a little patient. Unless you like goopy cheesecake, in that case – heh dig right in … for everyone else, the hardest part is allowing the cake to relaxie-taxi for a couple hours.


By the way, can i call you doll faces … as well, for any of you that noticed that friends reference can we be BFF’s and I’ll call you doll face for eva eva eva.

In complete random news, I heard a rumour that Spice girls and backstreet boys are doing a tour … you realize, if this actually happens, my life would be completed. I would want nothing more… for eva eva eva …. this is just a rumour isn’t it 😦 … I need to remember that we’re no longer in the 90s and in fact the spice girls and BSB were popular 20 years ago, don’t I?


I also now need to drown the fact that I feel old!! 😦

Smoked Sea Salt Dulce De Leche Skor Cheesecake


Crust Ingredients:

2 ½ Cups Graham cracker crumbs

1 cup Skor Chips

1 Tsp Smoked Sea Salt

2 Tbsp Brown Sugar

1 Tsp Cinnamon powder

2/3 cups unsalted butter, melted

Cheesecake filling

8-ounce packages cream cheese, room temperature

1 can dulce de leche condensed milk

1 ½ Tsp Smoked Sea Salt

1/4 cup fresh lemon juice

1 teaspoon vanilla extract

1 cup Skor Toffee bits

Combine crumb ingredients, press the crumb mixture into a 9-inch springform pan. Freeze while you prepare cheesecake mixture.

In a large bowl, beat the cream, condensed milk, sea salt, lemon juice smooth. Beat in the condensed milk a little at a time, scraping the sides of the bowl as necessary. Beat in the lemon juice and vanilla extract

Pour the filling into the crust; smooth the top with a rubber spatula. Sprinkle remaining skor chips.

Refrigerate until firm ( approximately 3 hours) or overnight.

I’m deeming July Birthday month at LTSL … we’ve got another one today – – and this one is extremely near and dear to my little Grinch heart… today we celebrate my personal superhero’s birthday.

I have a little secret to share with you folks about my dear Mr.LTSL – – when we started dating he would make silly little jokes about how he’s a superhero and would whisk me away if ever I was in danger (cheesy – yes – – did I buy into it and love every second of it – yes!) as time went on, instead of deterring him from this ultra-ego – – I think I’ve only made it worst.  

But today I’m here to say my love – – you will always be my knight in shining armor. You have used your superpowers to cast a spell on me, and I don’t want it to ever end. I’m flying among the stars when you’re by my side. I’ll keep this short and sweet by simply saying, I love you and I’m thankful that I have your constant support and love in my life. I’m floored by your smile, mesmerized by the look in your eyes and intrigued by your intellect. Loll, your friend hit the nail on its head when he said “I choose right” loll ha ha ha – – I sure did. I’m truly blessed, that you and I have each other.  You’ve managed to make me the happiest girl in the entire world, and together – – I know we are unstoppable.

For your 25th birthday, I have so many wishes and dreams for you – I want to see you take over the world;  see you succeed –  see you continue to fall in life – and for us to continue building our life together. But of all of this – – most of all, I wish you complete contentment, with yourself and those around you. I wish you laughter, the respect you deserve and everlasting love. I can’t wait to grow old with you, laughing with each other and at each other.

It’s a VeryBari Birthday!!

We’re celebrating another birthday for this month – – it’s VERYBARI’s birthday!! *woooo-hooooo* I would have to say, Miss. VeryBari is one of my newest of friends, only becoming close in the last couple years. But she’s one of those people you can’t help fall in love with.

She’s sassy – sexy – smart and has a shoe closet that would put Carrie Bradshaw to shame.

I love this little lady, and though she’s the most recent addition to our group of women I feel like I’ve known her forever. Her smile could fix the worst of days, her giggle is contagious – she’s as cute as a button and if I could, I would hand her the world.

She’s fun – and relatable. My favourite thing about my VeryBari is the fact that she’s real – she’s not there to gossip, or create any sort of confusion. Her simple mission is to lead an honest life – she sets out to enjoy every day, laugh as much as possible and leave her mark on the world.

With her, I don’t have to be anyone – – no mask needed, I don’t need to be the responsible one – or the funny one – – or the smart one. I can just be me – – without judgement. Ever. I feel safe with her; I’m comfortable with her knowing my entire life story, because after our discussion … it ends there.

She makes me proud to know such a strong, independent woman with values and morals that no one can shake. Through our friendship, she has taught me so much!! She convinces me to trust myself, to love myself and allow people to love me. She’s a constant reminder that even when things seem to be in the pooper, there’s ice cream waiting to cheer us up, hugs work wonders and your true friends would never leave you hanging.  

It’s true Miss. VeryBari, you’re one smart cookie 😉 and I am so lucky to know you.

Already, we’ve had some CRAZY CRAZY CRAZY times together – – moments that I wouldn’t trade in a lifetime. I thank you for it all – – but I know this is just the beginning. I know we have a forever of laughing, of traveling together, of partying and a lifetime of memories to make. It’s the crazy times that reassure me we’re in for the long run kiddo.

Please know, that I adore you – I respect you and I’m proud of the young woman you are.

She’s fun and funny. Causing those around her to laugh until their tummy hurts. She’s filled with warm cookies, hugs and kisses. She always has a kind word to say. A shoulder to lean on. And funky clothes for me to steal ( ironically, now she steals mine too lol)

She’s smart. Filled with wisdom that can only be transferred though our talks, her experiences and her endless stories.

She’s beautiful. Not just on the outside, but on the inside – – willing to give her last breath just to see someone smile. Her hands tell the story of hard work – her eyes the story of strength.

She’s my partner in crime

and I wouldn’t be half to woman I am today without her in my life.

Happy Birthday Beautiful!!

There is so much I want to convey through this letter to you. I want you to know that I love you – I love you more than I love cookies, and I don’t have to tell you how much I LOVE cookies. I love the way you smile, your kindness, you willingness to give, I love your ambition and your motivation to achieve your definition of success. I love your laugh, I love how crazy you are and the fact that you’ve surpassed being my mom – – you’re more like my shadow, by my side through the good – bad- and well, downright ugly.

I want you to know that I wish you happiness, cake, and laughter forever. The kind of laugher that makes you run to the bathroom, or your tummy hurt, the kind that makes you dance around. I want you to always experience the kind of happiness, that’s pure – and beams from your every blink.

I want to protect you from all the uglies in the world – – if possible keeping you in a bubble filled with butterflies and unicorns … oh and there would be oatmeal raisin cookies and bumble-berry crumbles galore ( I got your back 😉 lol). I don’t ever want to see you sad, and in the past twenty-five years you’ve held it together like a sly ninja. But it’s okay. I’m here for you – forever – always – no matter what. It’s okay to show weakness – I will catch you if you fall. You’ve done it for me a million times over. 

I admire all that you are and all that you stand for. I’m proud of you. Always. Even when you make mistakes. As you get older I hold closer the moments we spend together, I cherish our late night talks, our daily complaining sessions, and laughing like we’re best friends on the playground.

My favourite memories of us will always be in the kitchen. Whether it’s baking on Christmas eve – dancing around the place – or sharing family dinner. You’ve made my everyday extra special.

And last I want to thank you. Thank you for seeing my potential , especially when I don’t. Thank you for being the best you possible. Thank you for instilling in me the values of strength, trust and modesty. You’re not just a big deal to me – – but the biggest deal.

Happy 25th Birthday to My Miranda

Remember how I told you guys im the luckiest little lady in the world, and I have the pleasure and honor of having 3 amazing-tastic phenomenal best friends. Well today I celebrate another one of their birthdays!! *woot woot* – cue the fireworks and brrrinnng on the caaakkkeee –


( that’s of course not her real name …. but she is a kiwi and she is delicious :D) 

Today, my darling Kiwi turns 25!! Kind of a huge deal, when I’ve known her for about half of her life. We’ve seen each other grow up – – made endless mistakes together, laughed until we’ve pee’ed our pants, and held each other tight as we cried . We’ve been though the very best – – and stood strong through the very worst. I love her unconditionally, and only wish her unless success, happiness and love…. forever.

It’s funny when I think about it, the first day of high school was the first time the kiwi and I ever spoke – -we went to the same elementary school… but let’s face it, she was faaaarrr tooo cool for me ;). So, there we sat – on the school bus of our first day of high school. The conversation was WEIRD to say the least, forced almost – -we kept asking each other how our summer’s were – – that lasted the entire 45 minutes 😦 .

Today, this woman knows every detail of my life …. sometimes maybe a little too much ;). The truth is, I’m pretty convinced she knows me better than myself half the time. She’s exactly what I need in a best friend. She’s honest. She’s hilarious. She’s always willing to listen and give constructive criticism when I’m messing up my life. She’s frank – but does it with a gentle kiss. I’m seriously in awe of her every motion, and idea of exactly what it means to be a progressive woman in today’s world. 

Over the past years, what stands out the most is our extremely odd and random moments together. Late night talks, running around the city, trips across the country, crossing boarders, the men we’ve seen – – ohhhh the men!! The stupid pick-up lines we’ve had to hear – it’s the food we share – – the drinks we’ve toasted. It’s the tears and tight hugs. Some how – – we’ve managed to find ourselves ( and worked our way out) of some pretty sticky situations. I can look back and laugh now – – but I can’t help but wonder how in the world we made it out alive.

The Kiwi is different from each of my other best friends. She see’s the world through a different set of designer sun glasses – – she’s careful, calculated and it’s caused her to be the successful powerhouse she is today. You know that entire dream of taking on the corporate world, being a beautiful and successful woman decked out in a power suit – high heels – perfect lipstick and with every hair in tact. For her – – it’s not a dream …. it’s her every day reality. And I’m not naïve – – I know she works her cute behind off, I know it takes strength – it takes sacrifice – – but she does it. And she has and will forever succeed.

To me, she sets her eye on a prize and does whatever it takes to get there. She’s unstoppable. I respect her tenacity  of all of us, I want to believe she’s the most realistic – she doesn’t take anything or any one for granted. She knows that if she wants to get to the top (whatever that may mean) she’s got to fight. And fight she does. She’s the one I go to when I need to get my head out of the clouds. She grounds me and reminds me that we each have a purpose – own it, live it, love it.

When I think about it, she’s my Miranda.

Miranda – as in the sophisticated, sassy and career driven wonder woman of sex and the city. Just like Miranda, Miss Kiwi is very much career driven – she’s adorable – knows what she deserves and will not settle for less. She can be cynical – – but I call it being realistic ;). She’s the practical one in the group, and our needed and ever so necessary voice of rational. She’s loving. She’s bubbly. Modern, yet classy and classic. She’s the exact mix of wit – love and intelligence. I adore her, I really really really do.

And so my little muffin, Happy 25th birthday. Here’s to laughing until we’re old grannies … sitting in Williams, still discussing how messed up girls dress  – commenting on how amazing it would be if Mr. Clooney was our boy toy – – and of course complaining about how twisted our little world is. May we forever request doubles, dance until we need to be dragged home and have each other for support. You’ll always be my little crack monster … I love you and wish you a forever of rainbows, sprinkles, love and kisses.
