I think I also deserve some what of a medal ( or an extra slice of this booze laden bread) for not having a Pumpkin Spice Latte for the year … yet. I’m actually seeing how long I can hold on … at least to thanksgiving?!

With me writting this, I’ll probably get a whiff on my way home and cave.

But for now … wooo hooo goooo me!! The ironic part is I’ve had my fair share of pumpkin/ pumpkin spice goodies.

And because you’re probably sick of all of the pumpkin pizzazz I’m brining you another fall favourite … beer. Kidding … apppppplllleeesss … even though there’s no actual apples in this recipe … okay … let’s just go back to beeeeeeeerrr then.

Apple Cinnamon Beer Bread

Ingredients:

3 cups flour (sifted)

3 teaspoons baking powder

1-teaspoon salt

1 teaspoon cinnamon powder

¼ teaspoon ground ginger

¼ cup sugar

1 tablespoon apple sauce

1 teaspoon apple juice

¼ cup butter, melted

1 1/2 cups bottle Apple Beer

Directions:

  1. Preheat oven to 375 degrees.
  2. Sift flour into large bowl with baking powder, salt, cinnamon, ginger and sugar, making sure they’re mixed well.
  3. Add apple sauce, apple juice, and beer. Stir until just combined.
  4. Pour into greased loaf pan and pour melted butter right over the top.
  5. Bake for 1 hour  minutes or until gold brown.

Also, because we have a friendship based on trust … I trust that you will toast a slice ( or 7) slater it with butter and sprinkle it with cinnamon sugar.

Children of the playground … wooohoooo it’s weekend!!

I remember when we were younger, after the first day of school both my brother and I would always come home to both my parents home and a special treat. It was tradition. My parents always took the first day of school off … even when I went off to university ( I wish I was lying) … the special treats stopped though. You win some you loose some.

There’s always something exciting about the first day of school …

Fresh new paper, pencils that are sharpened, the fresh smell of the school. Granted, by the end of the week there are doodles all over your papers and you can’t even find that pencil you had Monday.

The beginning of September, with school starting, nights getting cooler and mornings getting darker always remind me of one thing … fall. It also doesn’t help that you can already get a PSL from your friendly barista … anywhooo …

Fall means a couple things to me

  • Chunky knits
  • Cinnamon
  • Pumpkin
  • Apples
  • Comfort food / goodies

And sooo I had no choice but to get my bakin’ on … hehe … bakin sounds like bacon. Maturity.

Caramel apple candy stuffed apple cookies

Ingredients:

1 cup margarine or butter

1 cup icing sugar + (2 Tbsp Icing Sugar for dusting … optional)

1/2 tsp. sea salt

1/4 cup applesauce

1/2 tbsp. cinnamon

1 tsp caramel extract

1 tsp vanilla extract

1 tbsp apple juice

2 1/2 cups all-purpose flour

24 werther’s caramel apple candies

Directions:

Preheat oven to 325 degrees.

Mix together the butter, 1 cup sugar, salt, applesauce, cinnamon, caramel extract, apple juice  and vanilla until well-combined.

Then gradually add in the flour.

Mix until fully incorporated and smooth.

Form dough into 24 balls.

Gently flatten each ball and  add worther’s candy in the middle.

Cover with dough.

Bake for 12 minutes or until lightly browned.

Once cools, dust with remaining 2 tbsp icing sugar.

Love Potion aka Apple Cider Sangria

… ps, I’ve come to realize – I bake a lot with alcohol!! Not that I think I need an excuse, but I figure what I can’t drink, I’ll eat – just kidding … kind of. 

I know we’re still a little ways away from valentine’s day, but trust me when I say love is in the air.

Just a couple weeks into this spanky year, and there’s talk of proposals, weddings & babies –first NO I’M NOT PREGNANT – and second, these three things can only mean L.O.V.E. A little love potion never hurt anyone and technically, this is just a mish-mosh of winter spices, some juice and booze .. lots of booze … lot of sweet, delicious, come-to-mama booze.

It’s been a rough week. I have big plans of downing this pitcher and having a scandal marathon. On that note, can we talk about my insane tendency to jump on good tv shows waaaaaayyy after the hoopla begins. It happened with friends, happened with How I Met Your Mother, happened with The Good Wife, Suits, Blacklist and now, of course Scandal. So I have crazy marathons, and then have no one to talk to about it, since everyone else is waaaaaayyy ahead of me.

 Love Potion aka Apple Cider Sangria

Serves 8 .. or 1 thirsty ready to ppaaarrtaaay /tired girl aka moi

3 apples, cored and sliced

1/4 cup cognac

3/4 cup caramel rum

4 cups apple cider

3 Cups persecco – chilled

1/2 Cup pomegranate seeds

5 cinnamon sticks

4 stars of anise

Directions: 

Add the apples to a large pitcher. Add the cognac, vodka, apple cider, and persecco. Add cinnamon sticks and stars of anise. Stir.

Fill the pitcher with ice. Pour the sangria into glasses filled with ice and top with sliced apple and pomegranate seeds.

Apple, Spice & Everything Nice Pull-Apart Bread

It’s frrriiidddaaaayyy woooo hooooo!!
… every week I yap on and on about how I can’t wait for the weekend, it’s going to be delicious, it involves sleep … and coffee … and pancakes .. and PJS – yaddy-yadda-yadda.
This week is no different, boy am I glad it’s Friday and I feeeel gooooooood!
*cue james brown – dancing shoes and all.

Does anyone else automatically think of the movie It takes Two when they hear that song?!? Remember when the Olsen twins were so little and cute?!? – who am I kidding, I still love those style mavens!!
It seems like pull-apart-bread is the new cool cat on the block. Everyone is doing it, and you should too. Because, even though it’s bread and I’m scared of anything requiring time to rise … this number is pretty easy and it smells like you walked into Bath and Body works … expect more delicious … and edible.
Funny story while perusing ( you think that says pursuing, don’t you – I seriously did spell check/ thesaurus check six times just to make sure I was spelling what I wanted to say … side note, inside of my note … I’m a terrible speller and I am so thankful for spell check – wooo, ggggoo computers and things). Back to my story while perusing out there on the line ( the internship, watch it .. SO FUNNY!!) I saw a million recipes for pull-apart-bread … and then I thought, I’m going to put apples between each layer and it will taste like apple pie.

Turns out, a lot of other genius people had the same idea. I almost didn’t make this bread – but then I did… and I ate it … a lot of it … and it made my home smell all nice and fall and cinnamony.

Apple, Spice & Everything Nice Pull-Apart Bread
Dough
2 3/4 cup + 2 additional TBSP
1/4 cup sugar
1 Tsp Cinnamon
½ Tsp fresh nutmeg
½ Tsp ground clove
1 pkg. active dry yeast
1/2 tsp. Sea salt
4 Tbsp. butter
1/3 cup whole milk
1/4 cup water
2 eggs (at room temperature)
1 tsp. pure vanilla extract
Filling
3 Large Apples ( I didn’t peel mine, because I wanted that rustic look
1 Tbsp Lemon Juice
¼ cup granulated sugar
½ tsp sea salt
1 cup Tubino sugar
2 tsp. cinnamon
4 Tbsp. butter, melted

Glaze
1 cup sifted confectioners’ sugar
2 Tablespoons milk

Directions
In a large mixing bowl, mix 2 cups of flour, sugar, cinnamon, nutmeg, clove, yeast and salt. Set aside.
Over low heat and in a small pan, melt the butter and milk. Once the butter is remove from heat and add the water and vanilla. Allow to cool.
Pour the milk mixture into the large bowl with the dry ingredients and mix well. Whisk together the eggs and add to the batter.
Add ¾ cups of flour and mix well.
Place the dough in a medium greased bowl. Allow to rise for 50 minutes. Once the dough has doubled its size, knead in 2 tablespoons of flour.
Cover the dough again for 5-10 minutes.
Great time, to work on the filling. In a medium bowl, combine sliced apples, lemon juice, granulated sugar and sea salt.
In a small bowl mix together the turbino sugar and cinnamon. Set aside.
Preheat oven to 350 oc, and prepare your bread pan.
Once the dough has risen, roll it out on a floured surface. Brush the melted butter on the dough and add the sugar mixture.
Even spread your filling across the dough. Each slice of apple will act as a guide to the size of your square.
Using a shape knife, cut the dough into approximately equal sized strips — they don’t have to be the exact same – don’t worry. Then cut the strips into approximately equal sized squares.
Stack the squares on top of each other. Place them in a prepared bread pan.
Allow the dough to rise and additional 15 minuets in the bread pan.
Bake for 30-35 minutes until outside of bread is golden brown.

While the bread bakes, make your glaze.

Whisk the confectioners’ sugar and 2 Tablespoon of milk until smooth. Add more milk to thin, if desired.

Remove bread from oven, allow to cool 20 minutes and drizzle with prepared glaze.

Apple Oatmeal Cookie Cake

The official holiday season kick off is this weekend.

THANKSGIVING Is this weekend and I couldn’t be more happy!!

Bring on the turkey, extra gravy – don’t mind if I do … and what’s that you want me to bake with nothing but pumpkin, apples, cinnamon, nutmeg and clove until I’m blue in the face – I’m on it!!

While, I’m no where even remotely ready to think about the big guy coming down the chimney, nor white stuff falling from the sky – thanksgiving is pretty special at the LTSL household and with brand new traditions starting this year – I can’t wait to see what this long weekend holds!!

I’m thankful for many things, family – friends – YOU – a good job, health.

I’ve said it a million times, but once more doesn’t hurt – I’m a damn lucky little lady!! For the many things I’m thankful for, I’d like to celebrate.

And so, we shall have cake!! Apple Oatmeal Cookie Cake. For some reason, this cake reminds me of a huge muffin … which is pretty much all the convincing I need to eat it for breakfast.

We’re celebrating – go ahead, eat the damn thing any time you want!!

Apple Oatmeal Cookie Cake

Ingredients:
1 ½ cup brown sugar

½ cup granulated sugar
3 large eggs
1½ cups vegetable oil
1 cup apple sauce

3 cups all-purpose flour
½ teaspoon sea salt
1 teaspoon baking soda
1 Tbsp ground cinnamon

1 Tsp grated Nutmeg
1 teaspoon vanilla extract
2 grated Golden Delicious apples

Oatmeal cookies ( 1 box) – reserve and coarsely crush 6 cookies

Directions:

 Preheat the oven to 325°F. Prepare cake pan.

With an electric mixer, beat the sugars, eggs, and oil until smooth. Add apple sauce and mix well.

Sift together the flour, sea salt, baking soda, and cinnamon and nutmeg. Add the flour mixture to the sugar mixture and beat well.

Add the vanilla. Stir in the grated apples.

Pour 1/3 of the batter into your prepared pan. Layer oatmeal cookies. Pour additional 1/3 of batter, layer with cookies, and then add last 1/3 of cake batter – top with crushed cookies and Bake for 1 hour and 30 minutes.

 Remove the cake from the oven, let it cool and slice.

Sunday’s with Joy: Upside-down Apple Zucchini Cream-Cheese Cake

I dream of getting lost in the caramelized apples that top this lovely cake. I want to jump right in, and swim among the love created by mixing butter – sugar – cinnamon and the sweet juices from a fresh apple. Ohhh – to live such a life – it would be such a delight!

I made you a cake my loves!! And it’s healthy …okay, it’s really not – – but anything with fruits and veggies counts as healthy in my books … (yes including strawberry cheese cake – – strawberries/ fruits – – cheese/dairy  😀 )  

For the last couple of weeks, I’ve been fasting for Ramadan and for the last couple of week’s every.single.night I’ve been having dessert. That’s right cupcakes EVERY NIGHT!! It all started with this – – and then I made this cake!

I blame Joy to be honest. How can one master minded woman come up with such delicious creations?!?!

She’s superwoman in disguise.

And while I blame Joy for helping me throw bikini season out the window – – I love her for bulking me up just in time for winter ( you got to add a positive spin to things )

 – – Joy, you sneaky sneaky woman … I adore you. But my bathing suit doesn’t and if I decide to hit the beach – – the masses may cry … but I’ll have cake 😀

I took Joy’s delectable Zucchini Cream Cheese Pound Cake recipe, added some apples a dash of cinnamon and some melted butta to create

 An Upside-down Apple Zucchini Cream-Cheese Cake!!

Ohhh mama! Talk about moist and scrumptious. This one is a keeper ( let’s be honest, every SWJ I do seems to be a keeper!!) But it’s no use if I just gab about it … go ahead and make’er.

You’ll thank me – – and fall in love with Joy she’s cool and loveable.

Upside-down Apple Zucchini Cream-Cheese Cake!!

Apple Upside-Down Topping:

  • 2 Medium sized apples, thinly sliced
  • 2 Tbsp Melted Butter
  • 1 Tbsp Ground Cinnamon
  • 2 Tbsp Granulated Sugar

Add all of the above ingredients into a large bowl. Mix and arrange in a well greased cake pan.

Dance with a slice (or 2) of cake tonight.
